Like most kids, my siblings and I loved anything with cheese. On days when my mother made spicy chiles rellenos, she would use the same egg for breading and the same tomato sauce for both dishes so nothing went to waste. The tortitas were perfect bite-sized treats for the children.</p>

Así no se desperdiciaba nada. Las tortitas eran bocaditos ideales para los niños.</p>

<em>Rinde 4-6 porciones</em></p>
<p>1 cabeza de coliflor, floretes picados en trozos grandes<br />
10 onzas de queso Manchego, cortado en trozos de 1 pulgada<br />
1 diente de ajo picado<br />
4 huevos<br />
5 tomates Roma, molidos<br />
2 ramitas de cilantro<br />
1 cucharadita de orégano mexicano seco, triturado<br />
1/2 taza de harina<br />
1/2 cebolla amarilla, picada en trozos<br />
aceite para freír (yo uso de semilla de uva)<br />
sal marina al gusto<br />
pimienta al gusto</p>
<p><strong>Instructions / Instrucciones</strong></p>
<p>Rinse and cut the cauliflower into florets about 2–3 inches in size. / Enjuaga y rebana los floretes de coliflor en piezas de 2–3 pulgadas.</p>
<p>Steam the cauliflower in a medium pot for about 10 minutes, then drain and let cool. / En una olla mediana, cuece la coliflor al vapor durante 10 minutos. Escúrrela y deja que se enfríe.</p>
<p>Place a piece of Manchego inside each floret. Press firmly with your hand to remove excess water and compact the cauliflower around the cheese. / Inserta un trozo de queso en cada florete. Presiona firmemente para escurrir el exceso de agua y compactar la coliflor alrededor del queso.</p>
<p>In a medium bowl, beat the egg whites until soft peaks form. Add the yolks one at a time and combine gently—do not overbeat. / En un tazón mediano, bate las claras a punto de turrón. Añade las yemas una por una y mezcla con cuidado; no batas en exceso.</p>
<p>Coat each cauliflower piece in flour, then dip it in the egg mixture to bread it. / Pasa cada pieza de coliflor por la harina y luego rebózala en el huevo.</p>
<p>Heat oil in a medium skillet and fry each piece until golden on all sides, about 30 seconds to 1 minute per side. Drain on paper towels to remove excess oil. / Calienta aceite en una sartén mediana y fríe cada tortita hasta que estén doradas, aproximadamente 30 segundos a 1 minuto por lado. <p>Heat 1 tablespoon of oil in a medium saucepan. Add the tomatoes, onion, cilantro, oregano and garlic. Season with salt and pepper and simmer until flavors meld. Remove from heat and blend until smooth if desired. / Calienta 1 cucharada de aceite en una cacerola mediana. Agrega tomate, cebolla, cilantro, orégano y ajo. Sazona con sal y pimienta y cocina a fuego lento hasta que los sabores se integren. Retira del fuego y licúa si lo deseas.</p>

<p>Spoon 2–3 tablespoons of tomato sauce onto each serving plate. Arrange 3–4 cauliflower patties on the sauce and serve at room temperature. / Coloca 2–3 cucharadas de salsa de tomate en el plato. Coloca 3–4 tortitas de coliflor sobre la salsa y sirve a temperatura ambiente.</p>

He’s at an age when he’s curious about everything I do—whether he’s holding a white board as a light reflector for food photos or shaping masa patties when I make tortillas. I enjoy having him beside me, asking questions, getting creative, and letting his hands get messy frosting cupcakes or stirring a pitcher of fresh cantaloupe agua fresca. He loves it and giggles with excitement the whole time.</p>

<p>Halloween is one of those seasons when we have the most fun in the kitchen. We celebrate Halloween and Día de los Muertos, and it happens to be my son’s birthday month too. This year we decided to make Halloween-themed birthday treats for his preschool class together. I wanted him to take the lead on the project and handle most of the preparation.</p>
<p>To spark ideas we visited Kraft Foods’ Halloween-inspired recipes. The site is full of seasonal inspiration as well as a wide range of fall recipes for casseroles, pumpkin desserts, and slow-cooker meals.</p>

<p>As if the Kraft site weren’t inspiring enough, we received a Halloween delivery full of themed goodies from Kraft. My son immediately loved the giant Pumpkin MALLOWS, so we decided to make chocolate-decorated pumpkin Mallow pops for his classmates.</p>
<p>The project was simple, fun and educational. After I showed him how to assemble and decorate a Mallow pop, he took over and made each treat his own.</p>

<li>1 freezer plastic bag</li>

<li>In a small microwave-safe bowl, place the candy melts and heat in one-minute increments until smooth. Let the chocolate cool for about 3 minutes. Spoon the melted chocolate into the freezer bag, push it down into one corner, twist the top closed, and snip a small hole from the tip to create a piping bag.</li>
<li>Insert a cake pop stick into the bottom of each Pumpkin Mallow and arrange them on a large tray or work surface.</li>
<li>Pipe Jack-o&#8217;-lantern faces or other fun designs onto the Pumpkin Mallows. Set them aside and allow the chocolate to set for about 15 minutes.</li>

Serve immediately with chips, toasted tortillas or as a fresh topping for grilled proteins.</li>

<p>Agua de melón holds a special place in my heart. Cantaloupe was my go-to fruit during a hot September in Los Angeles when I was nine months pregnant. Living without air conditioning, a bowl or pitcher of cool, creamy cantaloupe felt like a comfort all day long. I still picture myself in the only comfortable chair in the house — my office chair — feet swollen and propped up, with a pitcher of iced agua de melón at my side.</p>
<p>Next time a cantaloupe in your kitchen starts to smell very ripe (you’ll know the scent), slice it open and invite your neighbors over for a refreshing pitcher. This simple cooler is one of summer’s best thirst-quenchers.</p>

<li>In a pitcher, combine the blended cantaloupe, the remaining 6 cups of water, and the sugar. Stir until the sugar dissolves.</li>
<li>Serve the agua fresca over ice and garnish with fresh mint leaves.</li>

Vivíamos sin aire acondicionado y una jarra de agua de melón con hielo era un alivio constante. Recuerdo estar en la única silla cómoda de la casa, con los pies hinchados en alto y la jarra al lado.</p>

<p>For this version I used Mama Francesca Premium Cheese Products, available at my local Walmart. Mama Francesca offers several flavor blends—from basil and oregano to garlic and red pepper—so there’s a Parmesan option for every palate. For this recipe I chose the Classic Parmesan, Perfetto, which adds bold flavor so you need very little seasoning.</p>

<li>1 14.5-ounce can hearts of palm, chopped into 1/2-inch pieces</li>

<li>Fresh cracked pepper to taste</li>

<p>October is a whirlwind month for our family. In addition to Halloween, it&#8217;s my son&#8217;s birthday, so we always combine the two celebrations with costume parties and themed desserts. This year we marked his birthday with homemade chocolate fudge cupcakes—his favorite—and a pre-birthday viewing of Curious George&#8217;s first Halloween special: <strong>Curious George: A Halloween Boo Fest</strong>.</p>

<p>While I baked, my son followed George as he tried to solve the mystery of No Noggin, a ghost that appears in the countryside each Halloween with a mischievous habit of knocking hats off trick-or-treaters. Curious George is determined—along with Allie—to find out whether No Noggin is real and to capture photographic evidence.</p>

<li>Preheat oven to 350°F (175°C).</li>
<li>In a small saucepan, melt butter and chocolate chips over low to medium heat, stirring until smooth. Set aside to cool slightly.</li>
<li>In a large bowl, whisk together cocoa powder, flour, baking soda, baking powder and salt until combined. Set aside.</li>
<li>In a separate large bowl, whisk eggs, sugar, dark brown sugar and vanilla until smooth. Whisk in the melted chocolate and butter mixture.</li>
<li>Gradually add half of the flour mixture and half of the buttermilk, then add the remaining flour mixture and remaining buttermilk, whisking between additions. The batter will be pudding-like.</li>
<li>Line a cupcake tin with liners and spoon about 2 tablespoons of batter into each liner. Bake for about 20 minutes, or until a toothpick inserted into the center comes out clean. Cool completely before frosting.</li>
</ol>
<h4>Frosting – Makes about 2 cups</h4>
<ol>
<li>In a medium microwave-safe bowl, melt the butter. Stir in the cocoa powder until smooth.</li>
<li>Using an electric mixer, alternately add powdered sugar and milk until you reach the desired consistency.</li>
<li>Frost cupcakes and decorate with Halloween sprinkles.</li>

<li>In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the corn and cook until it begins to brown. Add the chopped squash and cook for about 5 minutes, stirring frequently. Remove from heat and allow the mixture to cool.</li>
<li>In a large salad bowl, combine the grape tomatoes, radishes, squash blossoms, chopped avocado, and the cooled corn-and-squash mixture.</li>
<li>In a separate bowl, whisk together the extra virgin olive oil, red wine vinegar, honey, sea salt, and cracked pepper. Pour the vinaigrette over the salad and toss gently to coat. Refrigerate for about an hour before serving to let flavors meld.</li>

With picnic season in full swing, this lentil salad is perfect for packing into a single container and enjoying outdoors—whether for a quick park lunch or a beach day. Served at room temperature, it’s easy to transport and ideal for gatherings of two or fifty.</p>
<p>This recipe evolved from a dish I often make during the Lenten season. I had all the ingredients on hand and, because lentils are full of fiber and nutrients, I turned it into a satisfying meal with a small change: I added smoked sausage. The savory rounds bring depth and richness that blend beautifully with the lentils, vegetables and shrimp. It quickly became the star of the plate and was a hit with everyone at the table.</p>
<p>The salad is versatile—scale quantities up or down for family dinners, potlucks or picnics. You can prepare the components ahead of time, then combine them and serve at room temperature for an easy, flavorful one-bowl meal.</p>

<li>6 cups water</li>
<li>1/2 onion</li>
<li>1 garlic clove</li>
<li>4 tablespoons olive oil, divided</li>
<li>2/3 cup asparagus, chopped</li>
<li>2/3 cup red bell pepper, chopped</li>
<li>1 cup button mushrooms, sliced</li>
<li>1 1/2 cups white corn, uncooked</li>
<li>1/4 teaspoon salt</li>
<li>1/4 teaspoon pepper</li>
<li>1 pound large raw shrimp, peeled, deveined and drained (tails off)</li>
<li>1 12-ounce smoked sausage, chopped into rounds</li>

<h3>Instructions</h3>
<ol>
<li>Rinse the lentils; do not soak.</li>
<li>In a large 5-quart stockpot, combine the lentils, half the onion, the garlic clove and the water. Bring to a rapid boil over medium-high heat, then reduce the heat and simmer uncovered for about 25 minutes, or until the lentils are tender. Drain, discard the onion and garlic, return the lentils to the pot and set aside.</li>
<li>In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the asparagus, red bell pepper, mushrooms and white corn. Season with salt and pepper and cook, stirring frequently, about 7–10 minutes until vegetables are tender. Set aside.</li>
<li>In a separate nonstick pan, heat the remaining 2 tablespoons of olive oil over medium-low heat. Add the shrimp and cook until pink and cooked through, about 4 minutes per side. Transfer the cooked shrimp to the skillet with the vegetables.</li>
<li>Using the same pan used for the shrimp, increase heat to medium-high and cook the sausage rounds, stirring frequently, until browned, about 5 minutes. Remove from heat and add the sausage to the skillet with the vegetables and shrimp.</li>
<li>Toss the vegetables, shrimp and sausage to combine, then add the mixture to the pot with the lentils. Return the pot to the stove over medium heat for 5 minutes to warm everything through. Stir gently to combine and serve warm or at room temperature.</li>

<li>In a medium skillet over medium-high heat, cook the bacon for about 5 minutes — do not crisp it fully. Discard most of the drippings, then add the white wine, halved cherry tomatoes and the lemon juice. Cook until the liquid is mostly reduced, about 5 minutes.</li>
<li>In a large bowl whisk together the grated Parmesan, eggs, heavy cream and freshly cracked pepper until smooth.</li>
<li>Cook the spaghetti according to package directions. Drain, reserving ¼ cup of the pasta cooking water.</li>
<li>Immediately add the hot spaghetti to the egg and cheese mixture and toss thoroughly so the heat from the pasta gently thickens the sauce. Add reserved pasta water a little at a time to reach the desired consistency. Cover and set aside briefly.</li>
<li>In a medium pan over medium-low heat, combine the breadcrumbs (or panko), olive oil, lemon zest, chopped parsley and a pinch of salt. Toast, stirring frequently, until the crumbs are lightly golden and fragrant, about 3 minutes.</li>
<li>Serve the spaghetti warm and top each portion with the toasted breadcrumb mixture for a bright, crunchy finish.</li>

<p><strong>Instrucciones</strong></p>

<li>En una sartén mediana a fuego medio-alto, cocina el tocino por unos 5 minutos sin dejar que se vuelva crujiente. Desecha la mayor parte de la grasa y añade el vino blanco, los tomates cortados y el jugo de limón. Cocina hasta que el líquido casi se evapore, aproximadamente 5 minutos.</li>
<li>En un tazón grande mezcla el parmesano, los huevos, la crema y la pimienta hasta obtener una mezcla homogénea.</li>
<li>Cocina el espagueti según las instrucciones del paquete. Escurre reservando ¼ taza del agua de cocción.</li>
<li>Inmediatamente incorpora el espagueti caliente a la mezcla de huevo y queso, mezclando bien para que la pasta caliente espese suavemente la salsa. Añade el agua de cocción reservada poco a poco si necesitas aligerar la salsa. Cubre y deja reposar un momento.</li>

The sweet, juicy bite of nectarine balances beautifully with creamy avocado, salty queso fresco and bright lime. If you’re a guacamole purist, try this once and you might be convinced to experiment more.</p>

<li>Halve, pit and peel the avocados. In a large bowl, mash the avocado to your preferred texture. Stir in the chopped onion, crumbled queso fresco, jalapeño and serrano chiles, fresh lime juice, and salt. Gently fold in the diced nectarine and chopped cilantro. Taste and adjust with more salt or lime juice if needed. Sprinkle with roasted watermelon seeds and serve with tortilla chips or your preferred dippers.</li>

<p>Agregar fruta de hueso, queso fresco, semillas tostadas o incluso hummus al guacamole es una tendencia deliciosa. La nectarina aporta un toque dulce y jugoso que contrasta con la cremosidad del aguacate y la salinidad del queso fresco. Si eres purista del guacamole, pruébalo una vez: puede abrirte a nuevas ideas.</p>

<strong>Guacamole de Nectarina y Queso Fresco</strong><br />
<strong>Ingredientes</strong></p>
<ul>
<li>4 aguacates maduros</li>
<li>1 taza de cebolla blanca picada</li>
<li>1 jalapeño fresco, finamente picado (dejar las semillas para más picante)</li>
<li>1 chile serrano fresco, finamente picado (dejar las semillas para más picante)</li>
<li>1/4 taza de jugo de limón fresco</li>
<li>3/4 taza de nectarina, picada en cubos pequeños</li>
<li>2/3 taza de queso fresco desmoronado</li>
<li>1/3 taza de cilantro finamente picado</li>
<li>1–1/4 cucharadita de sal</li>
<li>3/4 taza de semillas de sandía tostadas</li>
</ul>
<p><strong>Instrucciones</strong></p>
<p>Parte los aguacates por la mitad, quita el hueso y pélalos. En un tazón grande, machaca el aguacate hasta lograr la textura deseada. Agrega la cebolla, el queso fresco, los chiles, el jugo de limón y la sal. Incorpora la nectarina y el cilantro con movimientos suaves. Ajusta la sal o el limón al gusto. Espolvorea con semillas de sandía tostadas y sirve con totopos o vegetales crudos.</p>
