Sopa Tarasca, or Tarascan soup, is a rich and creamy pinto bean-based soup from Michoacán. It’s known for its distinct flavors from roasted vegetables and chiles, providing a hearty and satisfying experience without the need for cream or milk.

3 large Roma tomatoes
¼ white onion
2 garlic cloves, unpeeled
1 serrano chile, stem removed
3 dried ancho chiles, stems, seeds and veins removed, divided
7 cups water, divided
1 tablespoon Knorr® Selects Vegetable Bouillon
3 corn tortillas, divided
2 cups cooked low sodium pinto beans, drained, divided
1 cup plus 1 tablespoon oil for frying, divided
1 teaspoon dried Mexican oregano, crushed
1 avocado, chopped
queso fresco, crumbled
Instructions
Place tomatoes, onion, garlic cloves, serrano chile and dried ancho chiles on a skillet over medium-high heat. Turn frequently with tongs and roast on all sides until fragrant and slightly softened. Remove the garlic cloves and dried ancho chiles after about 5 minutes or once the ancho chile skins become soft and pliable. Peel the roasted garlic cloves and set them aside.
Continue to roast the remaining vegetables (tomatoes, onion, serrano chile) for an additional 15 minutes. During this time, their skins should develop appealing charred spots, indicating a deeper flavor profile.
Carefully transfer the roasted tomatoes, onion, serrano chile, peeled garlic cloves, and the softened ancho chile skins to a blender container. Add 2 cups of water, 1 tablespoon of Knorr® Selects Vegetable Bouillon, one corn tortilla, and 1 cup of the cooked pinto beans. Blend all ingredients until the mixture is completely smooth and creamy.
In a large saucepan, heat 1 tablespoon of oil over medium heat. Pour in the remaining 5 cups of water, add the remaining cooked pinto beans, and sprinkle in the crushed dried Mexican oregano. Bring the mixture to a gentle simmer for 10 minutes to allow the flavors to meld beautifully. Keep the soup warm over low heat while you prepare the garnishes.
Slice the remaining corn tortillas into thin, uniform strips. In a medium skillet, heat the remaining 1 cup of oil over medium heat. Carefully fry the tortilla strips until they become wonderfully crispy and achieve a golden-brown hue. Once fried, transfer them to a plate lined with paper towels to absorb any excess oil. Set these crispy strips aside.
Take the remaining dried ancho chile skins and slice them into small, delicate strips. Use the same oil from frying the tortilla strips and fry these ancho chile strips for approximately 3 minutes, turning them frequently. They should become slightly crisp. Transfer them to a paper-towel-lined plate to drain any excess oil, then set aside.
To serve, ladle the warm Sopa Tarasca into individual serving bowls. Generously garnish each bowl with the freshly fried tortilla strips, the crisp ancho chile skin strips, a sprinkling of chopped avocado, and crumbled queso fresco. Serve immediately and enjoy the authentic flavors of Michoacán.
