A delicious seafood twist on the traditional pozole. Perfect for the Lenten season, this hearty soup combines tender shrimp with a vibrant guajillo broth enriched by Clamato Tomato Cocktail, creating a unique and deeply satisfying meal.


Ingredients

  • 9 dried guajillo chili pods, seeds and stems removed
  • 1–2 dried chile de arbol pods, seeds and stems removed
  • 4 garlic cloves
  • ½ white onion, roughly chopped
  • 1 tablespoon olive oil
  • 1 teaspoon dried Mexican oregano, crushed
  • 2 bay leaves
  • 2 tablespoons shrimp bouillon
  • 4 cups low sodium chicken broth (vegetable broth or water can be substituted)
  • 2 cups Clamato Tomato Cocktail
  • 3 cups cooked white hominy, rinsed and drained
  • 12 ounces large cooked shrimp, tail off

Toppings:

  • Lettuce, shredded
  • Radishes, chopped
  • Cucumber, chopped
  • White onion, chopped
  • Serrano chilies, sliced
  • Dried oregano, crushed
  • Lime juice

Instructions

  1. Place chili pods in a medium saucepan and cover with enough water. Soak for 90 minutes, then bring to a boil over medium heat for 5 minutes. Remove from heat and drain, reserving 2 cups of the soaking water.
  2. Place garlic cloves, roughly chopped onion, and the soaked chili pods into a blender container. Add 2 cups of the reserved chili soaking water. Blend until the mixture is completely smooth. Carefully strain the blended mixture through a fine-mesh sieve into a bowl, pressing down on the solids to extract all liquid. Discard any remaining solids.
  3. Heat olive oil in a large saucepan or Dutch oven over medium heat. Pour in the strained chili mixture, then add the crushed oregano, bay leaves, shrimp bouillon, and chicken broth. Bring the mixture to a gentle simmer, stirring occasionally. Once simmering, stir in the Clamato Tomato Cocktail and the rinsed, drained hominy.
