- 1/4 cup brown sugar
- 1/8 teaspoon (pinch) salt
- 1/4 teaspoon ground cinnamon
- 1 tablespoon water
- 1/4 cup pecan halves

- Non-stick olive oil cooking spray
- 3 cups old fashioned rolled oats
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 2 cups oat milk (or any milk of your preference)
- 1/2 cup maple syrup
- 2 eggs, beaten
- 3 large yellow peaches, chopped; save a few slices for garnish
- 1/3 cup pecans, chopped
- Whipped cream (for serving)
- Mint leaves (for garnish)
Instructions
For Glazed Pecans
- Line a small tray with parchment paper. Set aside.
