Description

Experience the cozy, rich flavors of traditional Mexican champurrado transformed into a cool, refreshing popsicle. These creamy champurrado paletas offer the perfect balance of winter comfort and summer delight, making you forget you’re missing your favorite warm drink.


Ingredients


Scale

1/2 pound prepared unseasoned corn masa

1 (4-inch) cinnamon stick

3 ounces piloncillo (Mexican brown sugar cone)

1 (12 ounce) can evaporated milk

3 cups whole milk

2 (90 gram each) Mexican chocolate tablets (such as Ibarra or Abuelita)


Instructions

Place the corn masa and 1 cup of water into a blender. Blend until the mixture is completely smooth and free of lumps. Set this masa mixture aside.

In a large pot, combine 1 1/2 cups of water. Place the pot over medium heat. Once the water begins to boil, add the cinnamon stick and piloncillo. Reduce the heat to a low simmer and stir continuously until the piloncillo has completely dissolved into the water, creating a sweet, spiced base.

After the piloncillo has fully dissolved, pour in the evaporated milk and whole milk. Add the Mexican chocolate tablets to the pot. Continue to heat for approximately 10 minutes, stirring constantly to ensure the chocolate tablets melt smoothly and integrate fully into the milk mixture, creating a rich chocolate liquid.

Carefully pour the reserved masa mixture through a fine-mesh strainer directly into the pot with the chocolate milk. This step helps remove any remaining masa lumps, ensuring a silky-smooth paleta. Stir the entire mixture continuously as it heats until it begins to boil and visibly thickens. Once thickened to a desirable consistency, remove the pot from the heat and allow the mixture to cool completely to room temperature.

Once the champurrado mixture is thoroughly cooled, spoon it into your desired popsicle molds. Cover the molds with their lids (if applicable) and insert the popsicle sticks. Transfer the filled molds to the freezer and freeze for at least 4 hours, or until the paletas are completely firm and frozen solid. Enjoy these unique, creamy Champurrado Paletas!
