This year, our Halloween celebrations are taking on a slightly different, more intimate form. We might not be trick-or-treating around the neighborhood, but that only means we’re doubling down on the delightful tricks and treats right here at home, all month long!

Today, October 1st, marks the official kickoff of our spooky festivities, and what better way to begin than with a truly unique and utterly delectable creation: our homemade Conchas Vampiras, or Vampire Conchas. These aren’t just any pastries; they are a thrilling culinary adventure designed to capture the essence of Halloween in every bite.

Ingredients

Ingredients for Berry Sauce

  • 6 ounces fresh blackberries, rinsed
  • 6 ounces fresh raspberries, rinsed
  • 5 large strawberries, hulled and rinsed (California Strawberries recommended)
  • 3 tablespoons water
  • 1/3 cup sugar
  • 1 tablespoon corn starch (Argo Corn Starch recommended)

Ingredients for Coffee Whipped Cream (makes 4 cups)

  • 3 ½ cups heavy whipping cream, divided
  • 6 tablespoons confectioner’s sugar, divided (Imperial Sugar recommended)
  • 3 tablespoons instant coffee granules (Nescafe recommended)

To serve

  • 4 large conchas pan dulce (Northgate Conchas recommended)
  • ½ cup fresh blackberries
  • ½ cup fresh raspberries
  • 8 fresh strawberries

Instructions

  1. Prepare the Berry Sauce: Combine the fresh blackberries, raspberries, strawberries, and water in a small saucepan. Place the saucepan over medium heat. Stir the mixture gently until the berries begin to soften and release their juices, typically taking about 5 minutes. Once softened, use a fork or a potato masher to mash the berries thoroughly.
  2. Strain the Berry Mixture: Carefully transfer the mashed berry mixture to a fine-mesh strainer positioned over a clean bowl. Press the berry pulp firmly against the strainer with the back of a spoon to extract as much juice as possible, separating it from the seeds. You should yield approximately 1 cup of rich berry juice. Discard the remaining seeds and pulp.
  3. Simmer the Berry Juice: Pour ¾ cup of the strained berry juice back into the saucepan. Add the sugar to the juice and stir to combine. Cook over low heat, stirring occasionally, until the sugar is completely dissolved.
  4. Thicken the Sauce: In a separate small bowl, combine the remaining ¼ cup of berry juice with the corn starch. Whisk vigorously until the cornstarch is entirely dissolved, forming a smooth slurry. Add this cornstarch mixture to the saucepan with the simmering berry juice. Increase the heat to medium and stir frequently. Continue to cook until the mixture comes to a boil and thickens, which usually takes about 4 minutes. Once thickened, remove the saucepan from the heat and allow the berry sauce to cool completely before use.
  5. Prepare the Coffee Concentrate (while sauce cools): In a small saucepan, combine 1 cup of the heavy whipping cream, the instant coffee granules, and 3 tablespoons of confectioner’s sugar. Place over low heat. Whisk slowly and continuously until the coffee granules are completely dissolved into the cream. It is crucial not to let this mixture boil; simply warm it enough for the coffee to dissolve, about 5 minutes. Remove from heat and set aside to cool completely. This will be your coffee concentrate.
  6. Whip the Coffee Cream: In the bowl of a stand mixer fitted with a whisk attachment, combine the remaining 2 ½ cups of heavy whipping cream and the remaining 3 tablespoons of confectioner’s sugar. Whip on medium speed until stiff peaks form, indicating the cream is well-whipped and holds its shape. Gradually add the cooled coffee concentrate to the whipped cream in a slow, steady stream. Mix on low speed, or gently fold it in with a spatula, until the coffee mixture is thoroughly incorporated and uniform in color. Transfer the coffee whipped cream to a large piping bag (or a sturdy freezer bag with a corner snipped off) and refrigerate for at least 30 minutes to chill and firm up.
  7. Assemble the Conchas Vampiras: Take each large concha pan dulce and carefully slice it in half horizontally using a serrated bread knife, as if you were preparing a sandwich. Pipe a generous amount of the chilled coffee whipped cream onto the bottom half of each concha. Drizzle a good portion of the cooled berry sauce over the whipped cream. Carefully place the top half of the concha back on. For an extra touch of vampiric flair, drizzle more berry sauce over the top of the assembled concha. Finally, decorate each Concha Vampira with fresh blackberries, raspberries, and strawberries for a stunning presentation. Repeat this process with the remaining ingredients. Serve immediately and enjoy these ghoulishly good treats!
