Rediscover Authentic Flavors: Crafting the Perfect Milanesa with Chef Merito
There are certain dishes that transcend mere sustenance, becoming cherished vessels of memory and tradition. For me, one such dish is Milanesa. It has been years, perhaps even over a decade, since I last savored the crispy, tender delight of a perfectly prepared Milanesa. My last vivid memory transports me back to a bustling restaurant in Ciudad Juarez, a vibrant city just across the border, some twelve years ago. That meal wasn’t just food; it was a cornerstone of a cherished family ritual.
Before my move to the vibrant expanse of Los Angeles, when El Paso was home, Sundays held a special cadence. My family and I would routinely journey across the border to spend the day in Ciudad Juarez. These were days steeped in tradition and community. Our itinerary was always the same: first, attending mass, followed by an exhilarating visit to the local market. The market was a sensory explosion – a kaleidoscope of colors, a symphony of sounds, and an intoxicating blend of spices and fresh produce. It was here that we would stock up on beloved Mexican products, many of which were simply unavailable back in the US. Each Sunday culminated in a delightful family meal, almost invariably featuring a succulent Milanesa, perfectly breaded and fried, often paired with a heavenly slice of Tres Leches cake. Those were truly great times, etched deeply into my culinary memory.

My recent introduction to Chef Merito products felt like a profound culinary revelation, instantly rekindling those precious childhood memories. The moment I discovered that they carried seasoned breadcrumbs specifically designed for Milanesa, a wave of excitement washed over me. It wasn’t just an ingredient; it was a key to unlocking a forgotten flavor profile, a direct link to the tastes of my youth. I knew, unequivocally, that I had to prepare it.
Chef Merito is a brand synonymous with authentic Latin American flavors, and their range extends far beyond their exceptional seasoned breadcrumbs. They offer a diverse selection of marinades, essential seasonings, and aromatic spices that are foundational to countless traditional dishes. Their commitment to quality and authentic taste hasn’t gone unnoticed; Chef Merito proudly serves as the official carne asada seasoning for the beloved LA Dodgers, a testament to their deep roots within the community and their unwavering appeal. Furthermore, they are a proud sponsor of “Viva Los Dodgers!”, a vibrant celebration that brings together baseball and culture, much like the very essence of my Sunday excursions to Juarez. How incredible is that? This exciting partnership and the sheer quality of their products have made me an instant fan.
Bring the Taste of Tradition Home: Your Guide to Perfect Milanesa
Inspired by these rediscovered flavors and the sheer simplicity Chef Merito brings to authentic cooking, I am thrilled to share a classic Milanesa recipe. This isn’t just a meal; it’s an experience, a journey back to the heart of traditional Latin American cuisine, made incredibly accessible with Chef Merito’s expertise. Prepare to be transported!
Milanesa: A Homage to Heritage and Flavor
Yields: 4 servings
Prep time: 15 minutes
Cook time: 20 minutes
Ingredients:
- Approximately 1 inch of cooking oil for frying (such as vegetable, canola, or sunflower oil)
- 1.5 pounds Milanesa steak (thinly sliced beef cutlets, typically top round or sirloin tip, about 1/4 inch thick)
- 4 oz Chef Merito Seasoned Breadcrumbs for Milanesa (or more, as needed)
- 1 large egg
- Fresh salad for serving
- Crispy French fries for serving
- Optional: Lemon wedges, hot sauce, fresh cilantro for garnish
Instructions:
- Prepare the Breadcrumbs: Pour the Chef Merito Seasoned Breadcrumbs into a wide, shallow bowl or a clean plate. Ensure it’s spread evenly to make coating easy. Set aside.
- Prepare the Egg Wash: In a separate small bowl, lightly whisk the large egg until the yolk and white are well combined. You can add a tablespoon of water or milk to thin it slightly if desired.
- Pre-Heat the Oil: In a large, heavy-bottomed skillet or frying pan, add enough cooking oil to reach a depth of approximately 1 inch. Heat the oil over medium heat. To test if the oil is ready, drop a tiny pinch of breadcrumbs into the oil; if it sizzles gently, it’s at the right temperature (around 350-375°F or 175-190°C).
- Prepare the Steak: If your Milanesa steaks are not already paper-thin, place them between two sheets of plastic wrap and gently pound them with a meat mallet or the bottom of a heavy pan until they are uniformly thin, about 1/8 to 1/4 inch thick. This ensures even cooking and tenderness. Pat the meat dry with paper towels to help the egg wash adhere better.
- Coat the Milanesa: Take one steak and fully immerse it in the whisked egg, ensuring both sides are completely covered. Lift the steak, allowing any excess egg to drip off.
- Bread the Steak: Carefully transfer the egg-coated steak to the bowl of Chef Merito Seasoned Breadcrumbs. Press the breadcrumbs firmly onto both sides of the steak, ensuring a thick and even coating. Don’t be shy; a generous coating results in a crispier Milanesa. Gently shake off any loose crumbs. Repeat this process for all the remaining steaks.
- Fry the Milanesa: Once the oil is hot, carefully place one or two breaded steaks into the hot oil, ensuring you do not overcrowd the pan. Overcrowding can lower the oil temperature and result in soggy Milanesa. Fry each side for about 3-4 minutes, or until the breading is a beautiful golden brown and crispy. The internal temperature of the beef should reach 145°F (63°C).
- Drain Excess Oil: As each Milanesa finishes cooking, carefully remove it from the pan using tongs and place it on a plate lined with several layers of paper towels. This will help absorb any excess oil, ensuring your Milanesa stays wonderfully crisp and less greasy.
- Serve Immediately: Serve the hot, crispy Milanesa immediately alongside a fresh green salad (perhaps with a light vinaigrette), a generous portion of golden French fries, and a wedge of lemon for a bright squeeze. You might also consider serving it with a side of rice, beans, or a dollop of your favorite hot sauce.
The beauty of Chef Merito’s seasoned breadcrumbs is that they take the guesswork out of seasoning, delivering that authentic, savory flavor profile with incredible ease. This recipe is not just about making a meal; it’s about recreating a piece of culinary heritage right in your own kitchen.
