  • 2 large egg yolks, at room temperature, for richness and binding
  • 2 tablespoons ricotta cheese, for added creaminess and texture
  • 1 teaspoon pure vanilla extract, for a warm aromatic note
  • ¼ teaspoon salt, to balance the sweetness and enhance flavors
  • 2 tablespoons fresh lemon zest, for a bright, zesty counterpoint to the sweetness
  • 2 cups fresh raspberries, rinsed, gently dried, and lightly chopped to ensure even distribution
  • 2 Pillsbury refrigerated pie crusts, thawed to room temperature according to package directions
  • All-purpose flour, for dusting your work surface
  • 1 large egg, lightly beaten, for an egg wash to create a golden, glossy finish

Method

  1. Preheat your oven to 425°F (220°C). Prepare a baking sheet by lightly spraying it with non-stick cooking spray or lining it with parchment paper to prevent sticking.
  2. In a large mixing bowl, combine the softened cream cheese and sugar. Using an electric mixer on low speed, beat until the mixture is smooth and creamy, ensuring no lumps remain.
  3. Continue mixing on low speed, gradually adding the egg yolks, ricotta cheese, vanilla extract, salt, and lemon zest. Mix until just combined.
  4. Gently fold in the chopped raspberries until all ingredients are evenly distributed throughout the cream cheese mixture. Be careful not to mash the raspberries too much. Set this delicious filling aside.
  5. Lightly flour a clean work surface. Carefully unroll one of the Pillsbury pie crusts onto the floured surface. Using a rolling pin, gently extend the dough to approximately 12 inches in diameter, ensuring it’s evenly thin.
  6. Using a 3-inch round cookie cutter or the rim of a small bowl, cut out circles from the pie dough. Gather any dough scraps, re-roll them, and cut out more circles until all dough is used.
  7. Place about 1 to 1-1/2 heaping tablespoons of the raspberry cream cheese mixture onto the center of each dough circle. Be careful not to overfill, as this will make sealing difficult.
  8. Brush the edges of each dough circle lightly with the beaten egg wash. Carefully fold the dough circle in half, creating a semi-circle shape. Press the edges together firmly with your fingers, then use the tines of a fork to crimp and seal the edges securely, creating a decorative finish and preventing the filling from escaping.
  9. Carefully transfer the prepared empanadas to your prepared baking sheet, leaving a little space between each one.
  10. For an extra festive touch, if you have any leftover dough scraps, use a 1-inch star-shaped cookie cutter (or any small decorative cutter) to cut out shapes. Brush the tops of the empanadas with the remaining egg wash, then adhere a few stars or shapes to the tops of the empanadas. Brush over the decorative pieces with any leftover egg wash for a uniform golden sheen.
  11. Bake for 12-15 minutes, or until the empanadas are beautifully golden brown and the filling is set. Keep a close eye on them to prevent overbrowning.
  12. Remove from the oven and let cool slightly on the baking sheet before transferring to a wire rack to cool completely. These empanadas are delicious served warm or at room temperature.
