Description

Baked in under 30 minutes, these tangy and delicious baked citrus mahi-mahi will be a favorite family meal any time of the year. Quick, easy, and packed with flavor!


Ingredients

4 (6-oz) mahi-mahi filets

¼ cup lime juice

½ teaspoon vegetable bouillon

1 large garlic clove, finely chopped

2 teaspoons fresh ginger, finely chopped

¼ red onion, sliced in 8 rings, divided

½ teaspoon black pepper, divided

½ teaspoon dried red pepper flakes, divided

8 fresh cilantro sprigs, divided

2 tablespoons Land O Lakes® Butter with Olive Oil & Sea Salt, divided


Instructions

1. Place filets, lime juice, bouillon, garlic, and ginger in a resealable plastic bag. Seal and gently press with fingers to distribute the marinade evenly. Refrigerate for at least 45 minutes to allow the flavors to meld.

2. Preheat your oven to 450° F (232° C). Tear off four 8-inch square sheets of aluminum foil. Place one marinated mahi-mahi filet onto the center of each foil sheet. Evenly divide the red onion rings, black pepper, dried red pepper flakes, cilantro sprigs, and Land O Lakes® Butter with Olive Oil & Sea Salt on top of each filet. Bring the long sides of the foil together over the fish and fold them down tightly to create a sealed seam. Then, fold the short ends inwards to create secure, individual foil packets.
