Embracing Culinary Traditions: Molletes de Azucar and Chocolate de Agua
There are certain beautiful, simple moments in life we wish could last an eternity. For me, one of those cherished experiences is sharing a frothy cup of chocolate de agua and a plate of warm pan dulce with my mom. These are times filled with laughter, where we joyfully reminisce about lifelong friendships, whimsical childhood occurrences, and family events so memorable they become legendary tales, retold with dramatic re-enactments and just enough exaggeration to evoke bursts of laughter and extended smiles.
The gentle tickle of frothy chocolate de agua on my upper lip, and the delicate shower of sugar falling from my mollete de azúcar onto the dining table, are sure signs that autumn has arrived. These sensory cues herald the crisp embrace of cooler weather and the joyful anticipation of the approaching fall holidays. It’s a season that calls for warmth, comfort, and the loving preparation of simple recipes that create lasting, heartfelt memories.
In many Hispanic cultures, food is not merely sustenance; it’s a profound expression of love, heritage, and community. Chocolate de agua, a traditional Mexican hot chocolate made with water instead of milk, offers a lighter yet equally rich and comforting experience. Its foamy top, often achieved with a wooden molinillo, signifies warmth and home. Paired with molletes de azúcar—sweet bread rolls generously slathered with butter and sugar, then toasted to perfection—it creates a breakfast or merienda (afternoon snack) that nourishes both body and soul. These dishes are more than just food; they are an invitation to slow down, connect, and savor the present moment with loved ones. They carry the weight of generations, each sip and bite a testament to enduring family bonds and cherished customs.

So, when Princess House introduced their impressive 13-inch cast iron comal, I immediately recognized its potential. This wasn’t just another piece of cookware; it was destined to become the centerpiece for those precious family moments in the kitchen. Imagine the warmth of a bustling kitchen: molletes being expertly buttered and toasted, savory carne asada sizzling as it’s seared to perfection, and stacks of freshly warmed tortillas ready to be enjoyed. This comal promised to be an indispensable gem, one my kitchen could simply not be without.
The Princess House 13-inch cast iron comal is designed with both functionality and aesthetics in mind. Its robust construction ensures it’s safe and highly effective whether used in the oven for baking, on the stovetop for everyday cooking, or even on the grill for outdoor culinary adventures. This versatility makes it an incredibly valuable asset in any kitchen, adapting effortlessly to a wide range of cooking needs and techniques. Beyond its practical benefits, this comal is also a beautiful piece, designed to be proudly displayed. Its impactful enamel finish not only provides durability and ease of cleaning but also features elegant Princess House stainless steel branded details, adding a touch of sophistication to its rustic charm. It transforms cooking from a chore into an art, elevating the kitchen space with its timeless appeal.
Unparalleled Performance and Enduring Quality
What truly sets the Princess House cast iron comal apart is its superior material and thoughtful design. Made from high-quality cast iron, it requires no complicated initial seasoning or preparation—a significant advantage over traditional cast iron cookware that often demands extensive pre-use treatment. This low-maintenance aspect makes it incredibly user-friendly, allowing you to focus on cooking rather than tedious upkeep. Just like any exceptional cast iron piece, its durable matte-black porcelain enamel finish surface only improves with consistent use. Over time, it develops a natural non-stick quality and retains heat more efficiently, ensuring perfectly cooked food every time.
This comal is particularly ideal for high-temperature, dry-heat cooking methods where little to no added fat is required. This makes it perfect for achieving that coveted slight char on tortillas, searing meats to lock in their juices, or toasting bread and other ingredients without excessive oil. The even heat distribution inherent in cast iron prevents hot spots, ensuring uniform cooking across the entire surface. Its substantial weight provides stability, and the enamel coating protects against rust and simplifies cleaning. Investing in such a piece means not only enhancing your cooking capabilities but also acquiring a heirloom-quality item that will serve your family for generations, becoming a silent witness to countless shared meals and precious memories.

-
Yield:
Serves 4
Ingredients
For Molletes de Azucar:
- 2 large bolillos or French bread, sliced in half lengthwise
- 2 tablespoons butter
- 2 teaspoons sugar
- Cinnamon powder (optional)
For Chocolate de Agua:
- 4 cups water
- 1 (4-inch) cinnamon stick
- 1 (90-gram) Mexican chocolate tablet
Instructions
For Molletes de Azucar:
- Preheat oven to 350° F (175° C).
- On each bolillo half, spread 1/2 tablespoon of butter evenly and then sprinkle with 1/2 teaspoon of sugar.
- Arrange the prepared bread halves on your Princess House comal or a baking sheet. Bake for 12 minutes, or until the tops begin to brown slightly and the sugar caramelizes. Remove from oven, sprinkle with cinnamon (if desired), let cool for 5 minutes, and serve immediately with the warm chocolate de agua.
For Chocolate de Agua:
- In a medium saucepan, combine the water, cinnamon stick, and the Mexican chocolate tablet. Cook over medium heat, stirring continuously until the chocolate is completely dissolved and the mixture is well combined and hot.
- To create a beautiful froth, use a traditional molinillo (Mexican chocolate whisk) by holding it between your palms and rotating it rapidly by rubbing your palms together. Alternatively, use a hand frother or even a regular whisk to achieve a similar foamy texture.
- Serve the frothy chocolate de agua immediately in mugs, ready to accompany your freshly baked molletes de azucar.
