2 tablespoons Argo Corn Starch

¾ cup water, divided

2 ¾ cups fresh strawberries, hulled and quartered

½ cup granulated sugar
3 cups whole milk


Instructions

1. Prepare the Corn Starch Slurry: In a small bowl, combine the Argo Corn Starch with ¼ cup of water. Whisk thoroughly until the corn starch is completely dissolved and no lumps remain. Set this mixture aside; it will be used later to thicken the atole to perfection.

 

2. Cook the Strawberries: In a large 5-quart pot, combine the hulled and quartered strawberries, granulated sugar, and the remaining ½ cup of water. Place the pot over medium heat. Bring the mixture to a gentle boil, then reduce the heat to a simmer and continue cooking for 10 minutes. Be sure to stir every 2 minutes to prevent sticking and ensure even cooking, allowing the strawberries to soften and release their sweet juices.

 

3. Blend Until Smooth: Carefully add the milk to the cooked strawberry mixture in the pot. Using an immersion blender, blend the contents directly in the pot until the mixture is completely smooth and creamy. If you don’t have an immersion blender, you can carefully transfer the mixture to a regular blender, blend until smooth, and then return it to the pot.

 

4. Thicken and Serve: Stir the reserved corn starch mixture once more, then gradually add it to the pot with the strawberry and milk mixture. Bring the entire mixture to a boil, then reduce the heat and continue cooking for another 15 minutes, stirring frequently to ensure it thickens evenly and prevent any scorching.
