Irresistible Zesty Street Tofu Tacos: A Flavorful Plant-Based Experience

In our household, tofu isn’t just an ingredient; it’s a culinary canvas that has been a staple for many years. Its remarkable versatility and impressive nutritional profile make it a beloved component in countless meals we prepare. Whether you’re a long-time vegetarian, exploring plant-based options, or simply looking to incorporate more wholesome foods into your diet, tofu offers an incredible array of possibilities. We’ve enjoyed it in numerous forms, from simply dicing it and adding it to vibrant salads and hearty soups for a boost of protein and texture, to transforming it into crispy, golden-brown bites.

A light coating of corn starch and a quick pan-fry can elevate tofu to a delightful crispiness, perfect for topping rice bowls, noodle dishes, or even as a standalone snack. Beyond savory applications, tofu also shines in breakfast creations, serving as an excellent base for a delicious and filling scramble, a fantastic alternative to eggs, or a unique addition to your morning routine. Imagine starting your day with savory scrambled tofu breakfast burritos bursting with flavor!

The beauty of tofu lies in its ability to absorb flavors, making it an incredibly adaptable ingredient. It comes in various textures, from silken to extra-firm, each suited for different culinary techniques. This adaptability has always inspired me to push the boundaries of how we enjoy it, constantly seeking new and exciting ways to bring it to our table. It’s not just about healthy eating; it’s about discovering truly delicious and satisfying plant-based alternatives that appeal to everyone, even the most dedicated meat-eaters.

Despite our extensive history with tofu, there was one frontier I hadn’t yet explored: tofu tacos. My recent culinary mission was clear and ambitious: to craft the most delicious tofu tacos imaginable, ones so flavorful they would stand out against any taco we had ever tasted. With just a handful of carefully selected seasonings and an assortment of our favorite taco toppings, these baked tofu tacos came to life. The flavor profile is a delightful blend of zesty notes with a subtle kick of spice, reminiscent of a meatless version of chorizo or perfectly seasoned ground beef. What truly impressed me was how far a little tofu goes when prepared this way. I can easily feed my entire family with just two packages of Mori-Nu Silken Tofu, making this not only a delicious but also an economical meal.

The versatility of this seasoned tofu is another major bonus. If there are any leftovers – which is a rare occurrence in our house – they can be effortlessly repurposed. Imagine mixing it with roasted potatoes for a hearty side, filling burritos or empanadas for a quick lunch, or topping crispy tostadas for another fantastic meal. This recipe offers a foundation for countless creative culinary endeavors, ensuring nothing goes to waste and every meal is packed with flavor.

Description

Zesty tofu street tacos with just a bit of spice. Think of it as a meatless version of chorizo or seasoned ground beef. Perfect with your favorite taco toppings for a delicious plant-based meal.

Ingredients

2 packages Mori-Nu Silken Tofu Firm

¼ cup Soy sauce

3 tablespoons Olive oil

2 teaspoons Garlic powder

2 teaspoons Paprika

1 teaspoon Chipotle powder

3 tablespoons Nutritional yeast

12 street taco size corn tortillas (or 6 regular size corn tortillas), warmed

Taco toppings (Suggestions)

Sliced radishes

Coleslaw mix

Sliced serrano peppers

Fresh cilantro leaves

Chopped tomato

Lime juice

Instructions

1. Preheat your oven to 400° F (approximately 200° C). This ensures the oven is at the optimal temperature for baking the tofu to a perfect crispness.

2. Carefully remove the Mori-Nu Silken Tofu from its packaging and gently drain away any excess liquid. Tofu naturally contains a lot of water, so it’s crucial to press it between several layers of paper towels (or a clean kitchen towel) to remove as much moisture as possible. This step is vital for achieving a firm, flavorful, and non-soggy texture in your finished tacos. Set the pressed tofu aside.

3. In a medium-sized mixing bowl, combine the soy sauce, olive oil, garlic powder, paprika, chipotle powder, and nutritional yeast. Whisk these ingredients together thoroughly until they form a smooth, runny paste. This flavorful marinade will infuse the tofu with its zesty and spicy notes. Now, gently crumble the pressed tofu into the bowl. Using a spoon or your hands, carefully stir the tofu crumbles, ensuring each piece is evenly coated with the seasoned paste. Take care not to mash the tofu too much, as you want distinct crumbles.

4. Line a baking sheet with parchment paper for easy cleanup and to prevent sticking. Spread the seasoned tofu mixture onto the prepared baking sheet in a single, even layer. Avoid overcrowding the pan, as this can steam the tofu instead of baking it to a crispy finish. Bake for approximately 30 minutes, or until the tofu crumbles turn golden brown and begin to crisp around the edges. For even crispier results, you can gently stir the tofu halfway through the baking time.

5. While the tofu is baking, warm your street taco size corn tortillas (or regular size tortillas) according to package directions – you can warm them in a dry skillet, microwave, or oven. Once the tofu is ready, divide the flavorful tofu mix evenly among the warmed tortillas. Now comes the fun part: garnishing! Top your tacos generously with fresh, thinly sliced radishes for a peppery crunch, a crisp coleslaw mix for added texture, thinly sliced serrano peppers for an extra kick of heat, aromatic cilantro leaves, diced fresh tomato, and a final squeeze of fresh lime juice to brighten all the flavors. Serve immediately and enjoy these incredible plant-based street tacos!
