Baked Strawberry Buttermilk Doughnuts
Recipe adapted from Waylynn Lucas of Fonuts
Yields 18 doughnuts
Ingredients:
- 1 1/4 cups all-purpose flour, sifted
- 3/4 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 2/3 cup canola oil, plus more for greasing
- 1/2 cup buttermilk
- 1 large egg
- 1/2 teaspoon white vinegar
- 1/2 teaspoon vanilla extract
- 1/2 cup finely diced fresh strawberries (for batter)
- 2 cups powdered sugar
- Remaining diced strawberries (for glaze)
- 2 tablespoons water (for glaze)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the sifted flour, granulated sugar, baking soda, and kosher salt. Make a well in the center and set aside.
- In a separate medium bowl, whisk together the canola oil, buttermilk, egg, white vinegar, and vanilla extract until well combined.
- Pour the wet ingredients into the well of the dry ingredients and mix until a smooth batter forms.
- Gently stir in half of the finely diced fresh strawberries into the batter.
- Lightly grease a non-stick doughnut pan with a little canola oil.
- Spoon about 2 tablespoons of the batter into each doughnut mold, filling it about two-thirds full.
- Bake for 13-15 minutes, or until the doughnuts are golden brown and a wooden skewer inserted into one comes out clean.
- Carefully invert the baked doughnuts onto a wire rack placed over a baking sheet; allow them to cool completely.
For the Glaze:
- In a small bowl, whisk together the remaining diced strawberries, powdered sugar, and 2 tablespoons of water until the mixture is smooth and has a pourable consistency. Add more water a teaspoon at a time if the glaze is too thick.
- Once the doughnuts are completely cool, dip the tops of each doughnut into the prepared strawberry glaze.
- Return the glazed doughnuts to the wire rack and let the glaze set completely before serving.
