Ingredients
- 4 large flour tortillas
- 2 cups Monterey Jack cheese, shredded, divided
- 2 cups spinach, chopped, divided
- 1 1/3 cups cooked black beans, drained, divided

- On one half of a flour tortilla, evenly spread 1/4 cup of shredded Monterey Jack cheese.
- Top the cheese with 1/2 cup of chopped spinach and 1/3 cup of drained black beans.
- Add another 1/4 cup of shredded Monterey Jack cheese over the spinach and beans.
- Fold the tortilla in half, carefully enclosing the filling.
