Transform your busy weeknights with this delightful frozen veggie stir fry!

Life can be a whirlwind, can’t it? We all experience those demanding days that drain every ounce of energy, leaving us exhausted yet still facing the inevitable question: “What’s for dinner?” The thought of an elaborate meal prep often feels overwhelming. But what if there was a simple, nutritious solution that could get a delicious meal on the table in under 30 minutes? Enter the humble yet mighty frozen vegetable.

For me, frozen vegetables have consistently been a culinary lifesaver, transforming what could be a stressful evening into a remarkably smooth and satisfying mealtime. When those hectic days hit, I simply reach into my freezer, don my thinking cap, and whip up a dish so fresh and flavorful, no one would ever guess it started from a frosty bag. My secret ingredient supplier for these culinary triumphs? None other than Sprouts Farmers Market.

Sprouts stands out with its exceptional selection of frozen vegetables, boasting incredible variety and consistently great taste. Their commitment to quality means that every bag of frozen produce is packed with freshness and flavor, making meal planning not just easy, but truly inspiring. This week, my inspiration sprang from a colorful trio: Sprouts Brand frozen edamame, frozen broccoli cuts, and frozen corn – the perfect foundation for a vibrant and hearty noodle stir fry.

Why Frozen Vegetables Are Your Ultimate Weeknight Warrior

It’s time to champion frozen vegetables! Far from being merely a fallback, they are a powerful ally in healthy and convenient cooking. Here’s why they deserve a prime spot in your freezer:

  • Unmatched Convenience: Forget washing, peeling, and chopping. Frozen vegetables come prepped and ready, drastically cutting down on your meal preparation time. This means less time in the kitchen and more time enjoying your evening.
  • Peak Nutrition Preserved: Many frozen vegetables are picked at their peak ripeness, when their nutritional content is highest, and then flash-frozen within hours. This rapid freezing process locks in vitamins, minerals, and flavor, often making them as nutritious, if not more so, than their fresh counterparts that may have traveled long distances.
  • Year-Round Variety: Craving asparagus in winter or corn on the cob in spring? Frozen vegetables offer access to a diverse array of produce regardless of the season, allowing for endless culinary creativity throughout the year.
  • Reduced Food Waste: With frozen veggies, you use exactly what you need and store the rest without worrying about spoilage. This significantly reduces food waste and saves you money in the long run.
  • Budget-Friendly: Frozen vegetables can often be more economical than fresh, especially when fresh produce is out of season. Stocking up on sale items can further enhance your grocery savings.

The Star Dish: Frozen Veggies Stir Fry with Noodles

This week’s recipe, the Frozen Veggies Stir Fry with Noodles, is a testament to the convenience and deliciousness that frozen produce offers. It’s a vibrant, flavorful, and incredibly versatile dish that can be on your table faster than you can order takeout.

What I love most about this stir fry is its adaptability. While this particular recipe features a delightful medley of frozen edamame, broccoli, corn, cauliflower, kale, and peas and carrots, you are absolutely encouraged to use any frozen vegetable combination you prefer! Think bell peppers, snap peas, mushrooms, or even a mixed stir-fry blend – the possibilities are truly endless.

This recipe is presented as a delicious meatless version, making it an excellent choice if you’re observing the Lenten season, following a vegetarian diet, or simply looking to reduce your meat intake. However, it’s incredibly easy to customize with your favorite protein. Feel free to add pan-fried tofu, tempeh, chicken strips, shrimp, or even a whisked egg for an extra boost. Regardless of your additions, this stir fry is bursting with savory flavors and offers a bounty of nutritional benefits from its colorful array of vegetables.

Tips for Mastering Your Frozen Veggie Stir Fry

  • High Heat is Key: Stir-frying thrives on high heat and quick cooking. Ensure your wok or sauté pan is properly heated before adding ingredients to achieve that desirable tender-crisp texture for your vegetables.
  • Don’t Overcrowd the Pan: Cook vegetables in batches if necessary, especially if you’re making a large portion. Overcrowding can lower the pan’s temperature, leading to steamed rather than stir-fried veggies.
  • The Perfect Sauce: The sauce is the heart of any stir fry. Whisk all your sauce ingredients together beforehand (soy sauce, sugar, rice vinegar, sesame oil, black pepper, and vegetable broth) so it’s ready to pour in at the right moment.
  • Thaw or No Thaw? For most frozen vegetables in a stir fry, you don’t need to thaw them completely. Adding them directly to the hot pan can help them retain their texture. However, for quicker cooking, you can run them under cold water briefly to separate.
  • Noodle Know-How: Cook your noodles al dente according to package instructions. Overcooked noodles will become mushy in the stir fry. Rinsing them with cold water after draining prevents them from sticking together.
  • Customization is King: Don’t be afraid to experiment with different frozen vegetables, spices, or even a touch of ginger for an extra flavor kick.

Ingredients

  • 1 (8-ounce) package dry noodles (e.g., ramen without seasoning packet, lo mein, or spaghetti)
  • 1/4 cup Sprouts Brand Low Sodium soy sauce
  • 1 tablespoon sugar
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 1/2 cup vegetable broth
  • 2 tablespoon canola oil
  • 1/3 cup onion, roughly chopped
  • 2 garlic cloves, minced
  • 1 medium red bell pepper, sliced into strips
  • 1 cup cremini mushrooms, sliced
  • 1 cup cauliflower florets, chopped
  • 1 cup Sprouts Brand chopped frozen broccoli
  • 1/2 cup Sprouts Brand frozen edamame soybeans
  • 1/2 cup Sprouts Brand frozen cut corn
  • 2 cups chopped frozen kale
  • 1 cup Sprouts Brand frozen peas and carrots blend
  • Additional Sprouts Brand Vegetable Broth (as needed)
  • Toasted sesame seeds, for garnish
  • Sprouts Brand red pepper flakes, for garnish (optional, for heat)

Instructions

  1. Prepare noodles according to package instructions, ensuring they are al dente. Drain thoroughly and rinse with cold water to prevent sticking. Set aside.
  2. While the noodles are cooking, prepare the stir-fry sauce. In a medium bowl, whisk together the Sprouts Brand Low Sodium soy sauce, sugar, rice vinegar, sesame oil, black pepper, and 1/2 cup vegetable broth until well combined. Set aside.
  3. Heat 2 tablespoons of canola oil in a large wok or a spacious sauté pan over medium-high heat.
  4. Add the roughly chopped onion, minced garlic, sliced red bell pepper, and sliced cremini mushrooms to the hot pan. Cook for approximately 2 minutes, stirring constantly, until vegetables begin to soften slightly.
  5. Next, add the chopped cauliflower florets, Sprouts Brand chopped frozen broccoli, Sprouts Brand frozen edamame soybeans, Sprouts Brand frozen cut corn, chopped frozen kale, and Sprouts Brand frozen peas and carrots blend. Continue to cook, stirring rapidly and constantly, for 5-7 minutes, or until all vegetables are tender-crisp.
  6. Add the cooked and drained noodles and the prepared soy sauce mixture to the pan. Increase the heat to high.
  7. Using tongs, carefully fold all the ingredients together, ensuring the noodles and vegetables are thoroughly coated with the sauce. Cook for 1-2 minutes, allowing the sauce to thicken and coat the ingredients beautifully.
  8. If the noodles begin to stick to the pan, add 2-3 tablespoons of additional Sprouts Brand vegetable broth and briefly decrease the heat.
  9. Remove the stir fry from the heat and serve immediately. Garnish generously with toasted sesame seeds and, if you enjoy a little heat, a sprinkle of Sprouts Brand red pepper flakes. Enjoy your quick, healthy, and delicious meal!
