Smothered Eggs

Huevos Encobijados, a delicious Mexican breakfast with fried eggs and refried beans between tortillas, covered in spicy tomato sauce.

Huevos Encobijados: A Quintessential Mexican Breakfast for the Soul

Huevos Encobijados, a beloved Mexican breakfast dish translating beautifully to “covered eggs” or “eggs tucked under a blanket,” is a culinary embrace on a plate. This comforting and incredibly flavorful meal begins with a perfectly fried egg nestled atop a corn tortilla generously spread with warm, creamy refried pinto beans. This savory foundation is then lovingly covered by another fried corn tortilla, creating a “blanket” that hints at the delightful surprise within. The entire ensemble is then generously bathed in a rich, zesty, and often spicy tomato sauce, culminating in a dish that is both hearty and incredibly satisfying. A final flourish of melting cheese transforms this simple breakfast into an experience of pure culinary joy.

This dish is more than just a meal; it’s a taste of Mexican tradition, a staple that brings families together around the breakfast table. Its regional variations speak to the rich diversity of Mexican cuisine, with each household often holding a cherished version passed down through generations. While the core concept remains, the nuances in sauce, choice of beans, and additional fillings make each rendition uniquely special. Whether you’re seeking a comforting start to your day or a delightful brunch option, Huevos Encobijados promises a symphony of textures and flavors that will transport your palate straight to Mexico.

The beauty of Huevos Encobijados lies in its versatility. While the classic preparation is a masterpiece in itself, many enjoy customizing it to suit their preferences. Some adventurous cooks love incorporating savory additions like crumbled chorizo, adding a smoky, spiced depth, or tender, diced potatoes for extra heartiness. For a touch of authentic Mexican dairy, I highly recommend sprinkling the refried beans with creamy Real California Queso Fresco. Its fresh, mild, and crumbly texture perfectly complements the earthy beans and adds a delightful tang. To elevate the dish further, once the spicy tomato sauce is poured over, a generous layer of melting cheese, such as Real California Monterey Jack Cheese, creates a luscious, gooey topping. A final sprinkle of fresh cilantro not only adds a vibrant pop of color but also a burst of herbaceous freshness that cuts through the richness of the cheese and sauce, balancing the entire flavor profile beautifully.

Ingredients

  • 3 Serrano chiles, tops removed
  • 2 jalapeño chiles, tops removed
  • 8 Roma tomatoes, stem scar removed
  • ¼ piece onion
  • 2 garlic cloves
  • 1/3 cup plus 2 tablespoons cooking oil, divided
  • 1 teaspoon garlic salt
  • 8 corn tortillas
  • 1 1/3 cup refried pinto beans, warmed
  • ½ cup Real California Queso Fresco, crumbled
  • 4 fried eggs
  • 1 cup Real California Monterey Jack Cheese, shredded
  • Fresh cilantro, chopped (for garnish, optional)

Instructions

  1. Prepare the Chile-Tomato Sauce: In a medium saucepan, bring 6 cups of water to a rolling boil. Carefully add the Serrano and jalapeño chiles and boil for approximately 5 minutes until they begin to soften. Next, add the Roma tomatoes, onion piece, and garlic cloves to the boiling water. Continue to boil for another 8 minutes, or until the tomato skins start to loosen and peel off easily. This indicates they are tender enough for blending. Remove the vegetables from the heat and allow them to cool slightly. Once cooled, transfer all the boiled ingredients to a blender. Add ½ cup of fresh water and blend until you achieve a perfectly smooth, consistent sauce. For a finer sauce, you may pass it through a fine-mesh sieve, though this is optional.
  2. Simmer the Sauce: Heat 2 tablespoons of cooking oil in a large frying pan over medium heat. Once the oil is shimmering, carefully pour in the blended chile-tomato sauce. Season the sauce generously with 1 teaspoon of garlic salt, or to taste, stirring well to combine. Bring the sauce to a gentle simmer and let it cook for about 15 minutes, allowing the flavors to meld and the sauce to slightly thicken. Keep the sauce warm over low heat while you prepare the remaining components.
  3. Prepare the Tortillas: In a separate large frying pan, heat the remaining cooking oil (approximately 1/3 cup) over medium-high heat. Once the oil is hot, lightly fry each corn tortilla for about 15 seconds per side, just until they are soft and slightly pliable, but not crispy. This quick fry prevents them from becoming soggy when covered with sauce. Transfer the fried tortillas to a plate lined with paper towels to absorb any excess oil, ensuring they retain a pleasant texture.
  4. Assemble the Huevos Encobijados: On four of the fried tortillas, spread approximately 1/3 cup of warm refried pinto beans evenly. Sprinkle 2 tablespoons of Real California Queso Fresco over the beans on each tortilla. Carefully place one fried egg on top of the bean and cheese mixture on each of these four tortillas. Now, take the remaining four fried tortillas and use them as “blankets” to cover each of the prepared egg and bean tortillas. Spoon a generous amount of the warm, spicy tomato sauce over the top of each “covered egg.” Finally, sprinkle each serving with a substantial amount of shredded Real California Monterey Jack Cheese. The residual heat from the sauce and components will gently melt the cheese, creating a delicious, gooey topping. Garnish with fresh cilantro if desired, and serve immediately.
