  • 6 dried guajillo chiles, tops and seeds removed
  • 8 cups chicken broth, unsalted (or vegetable broth for a fully vegetarian option)
  • 2 garlic cloves, peeled
  • ½ cup onion, roughly chopped
  • 14 ounces Hunt’s Whole Peeled Plum Tomatoes, or 1 (15 ounce) can Hunt’s Organic Tomato Sauce (ensure it’s FlashSteamed for the purest flavor!)
  • 2 bay leaves
  • 2 chayotes, peeled, deseeded, and chopped into bite-sized pieces
  • 1 cup cracked hominy corn, rinsed
  • Fresh cilantro for garnish


Instructions

  1. Reserve ½ of one guajillo dried chile. With a sharp knife, slice it thinly into delicate strips and set these aside; they will make a beautiful and flavorful garnish.
  2. In a large 6-quart stock pot, combine the remaining dried chiles (the 5.5 chiles), chicken broth, whole garlic cloves, and roughly chopped onion. Bring this mixture to a gentle simmer over medium heat and let it cook for about 10 minutes to soften the chiles and infuse the broth with aromatic flavors. Carefully transfer the contents of the pot to a blender container. Add the Hunt’s Whole Peeled Plum Tomatoes (or tomato sauce) to the blender.
