1 (10-ounce) package queso fresco, crumbled
1/4 cup white onion, finely chopped
12 cherry tomatoes, quartered
2 large radishes, chopped
3/4 cup cucumber, chopped
1 small jalapeño, finely chopped
1/3 cup fresh cilantro, finely chopped, (save some sprigs for garnish)
2 tablespoons, lime juice (plus more for serving)
2 1/2 teaspoon Knorr Selects Chicken Granulated Buillon, divided
1/2 teaspoon ground black pepper, save some for garnish
4 large avocados
2 tablespoons olive oil or olive oil spray
Instructions
Preheat your grill or grill pan over medium heat to ensure even cooking and distinct grill marks.
In a medium bowl, combine the crumbled queso fresco, finely chopped white onion, quartered cherry tomatoes, chopped radishes, chopped cucumber, finely chopped jalapeño, finely chopped fresh cilantro (reserving some sprigs for garnish), lime juice, 1 1/2 teaspoons of Knorr Selects Chicken Granulated Bouillon, and a 1/2 teaspoon of ground black pepper. Gently fold all the ingredients together with a large spoon until well combined. Cover the bowl and refrigerate the salad to allow the flavors to meld beautifully until you are ready to serve.
Carefully slice the large avocados lengthwise and remove and discard the pits. Brush or spray the cut side of each avocado half generously with olive oil. Evenly sprinkle the remaining Knorr Selects Bouillon over the oiled avocado halves for an extra burst of savory flavor.
