Description

Rich and creamy, this Flan de Nata offers an unparalleled indulgence. It’s just as delicious and decadent as the traditional flan, with an enhanced silky texture thanks to the addition of nata cream.


Ingredients

1 1/3 cups Parmalat Nata Para Desayunar

1 ¼ cup milk

¾ cup sugar

1 (4-inch) cinnamon stick

5 eggs

1 teaspoon vanilla extract

Ingredients for caramel topping:

1/3 cup granulated sugar

3 tablespoons water


Instructions

  1. Preheat oven to 350° F. Lightly spray an 8-inch round mold with non-stick cooking spray. Set aside.
  2. Directions for caramel: Combine 1/3 cup granulated sugar and 3 tablespoons water in a medium saucepan over medium heat. Bring the mixture to a boil without stirring. Carefully swirl the pan gently and continuously until the sugar mixture transforms into a beautiful amber color. Immediately pour the hot caramel into the prepared mold. Swirl the mold to evenly coat the bottom of the pan. Set aside to cool and harden.
  3. Directions for flan: In a large bowl, whisk together the Parmalat Nata, milk, and ¾ cup sugar until well combined. Transfer this mixture to a large saucepan and place it over medium heat. Add the cinnamon stick to the saucepan. Whisk slowly and continuously until the mixture just comes to a boil. Remove the saucepan from the heat, take out the cinnamon stick, and let the mixture cool completely to room temperature.
  4. In a separate large mixing bowl, whisk the 5 eggs until they are lightly beaten. Once the nata mixture has cooled, slowly strain it into the beaten eggs, whisking constantly to ensure the eggs temper properly and no lumps form. Stir in the vanilla extract. Carefully pour the smooth flan mixture into the prepared mold with the hardened caramel.
  5. Place the flan mold into a larger roasting pan. Carefully fill the roasting pan with hot water, ensuring the water comes up approximately halfway around the flan mold. Cover the entire roasting pan and flan mold tightly with aluminum foil. Carefully transfer the roasting pan to the preheated oven.
  6. Bake for 45-50 minutes, or until the edges are set but the center still has a slight wobble when gently shaken. Remove the roasting pan from the oven. Keep the flan covered and let it cool completely in the water-filled roasting pan for at least 2 hours. Once cooled, carefully remove the flan mold from the roasting pan. Refrigerate the flan overnight to allow it to fully set and chill.
  7. To serve, run a small, thin knife around the edge of the flan to loosen it from the mold. Place a serving plate upside down over the mold, then invert the flan onto the plate with a quick, confident motion, shaking gently to release the flan. The caramel will now be on top, creating a beautiful glaze. Slice and serve your delicious Flan de Nata.
