Savory Spiced Beef and Potato Empanadas

Delicious Beef and Potato Empanadas: The Ultimate Back-to-School Lunchbox Solution

As summer days dwindle and the scent of freshly sharpened pencils fills the air, the countdown to the first day of school inevitably begins. My summer mission was clear: to prepare for the academic year in every conceivable way. From stocking up on essential school supplies (a huge shout-out to the convenience of online shopping!) to gradually easing into the school night bedtime routine, every detail has been meticulously planned. Yet, one of the most crucial preparations, and arguably the most exciting, has been perfecting a repertoire of lunchbox-friendly recipes designed to delight young palates and ensure not a single bite goes uneaten.

The quest for the perfect packed lunch often feels like an unending challenge for parents. We strive for meals that are not only nutritious but also appealing, easy to eat, and capable of holding up well until lunchtime. Finding that sweet spot between healthy and delicious, while also considering practicality, can be daunting. This year, my secret weapon for conquering the lunchbox dilemma is a classic comfort food reimagined for modern convenience: savory beef and potato empanadas. They are truly a game-changer for busy school mornings and discerning eaters alike.

Why Empanadas Are Your New Back-to-School Lunch Hero

Empanadas, those delightful handheld pastries filled with savory or sweet goodness, stand out as an exceptional choice for school lunches for a multitude of reasons. Their inherent design makes them the quintessential “kid food”—no utensils required, meaning less mess and more independence for little hands. This self-contained nature also makes them incredibly portable, fitting snugly into any lunchbox or backpack without fuss. Whether enjoyed warm from a thermos or at room temperature, these pastries maintain their delicious flavor and satisfying texture, offering flexibility for varied school environments.

Beyond their convenience, empanadas offer a fantastic canvas for a balanced meal. The beef and potato filling provides a hearty combination of protein, carbohydrates, and vegetables, ensuring sustained energy throughout the school day. Kids are often more inclined to try foods that are fun to eat, and the compact, pastry-encased format of an empanada is undeniably appealing. You can even customize the fillings to cater to different tastes, making them a versatile option for even the pickiest eaters. Imagine a savory beef and potato delight, or even a sweet fruit-filled version for a special treat!

Crafting the Perfect Filling: Quality Ingredients from Sprouts Farmers Market

The secret to truly outstanding empanadas lies in the quality of their ingredients, and for this recipe, I turned to Sprouts Farmers Market. Their commitment to fresh, natural, and high-quality products ensures every bite is packed with flavor and goodness. For the robust filling of these beef and potato empanadas, I specifically chose Sprouts Old Tyme Butcher Shop 100% grass-fed beef stew meat. This selection guarantees a tender, flavorful base for the filling, thanks to Sprouts’ meticulous sourcing and never-frozen promise. The difference in taste and texture is undeniable, providing a juicy and rich experience every time.

Sprouts Farmers Market offers an incredible variety of meat options, making it easy to adapt this recipe to your family’s preferences. While grass-fed beef stew meat delivers exceptional tenderness and depth of flavor, you could also opt for Sprouts’ high-quality ground beef for a quicker preparation, or even experiment with their carne asada or skirt steak for a different culinary twist. Whatever your preference, Sprouts has the fresh, premium cuts you need to create a truly delectable dish. Their dedication to never-frozen meats means you always start with the freshest possible ingredients, leading to superior results in your kitchen.

Complementing the rich beef, this recipe incorporates wholesome vegetables like yellow onion, garlic, white potato, and Sprouts brand frozen peas and diced tomatoes. These ingredients not only add essential nutrients but also contribute to the delicious complexity of the filling, creating a well-rounded and satisfying meal. The harmonious blend of savory beef, tender potatoes, and vibrant vegetables encased in a buttery, flaky dough makes these empanadas an instant family favorite.

Tips for Empanada Success and Meal Prep Efficiency

Making empanadas, while seemingly intricate, is a rewarding process that can be streamlined for efficient meal preparation. The dough, crafted from all-purpose flour, Sprouts Brand baking powder, unsalted butter, eggs, and water, is designed to be soft and malleable, ensuring a perfect flaky crust. When preparing the beef and vegetable filling, ensure the ingredients are cooked until tender and then allowed to cool completely before assembling the empanadas. This crucial step prevents the dough from becoming soggy and helps maintain the integrity of the pastry during baking.

For busy weeks, these empanadas are excellent for making ahead. Once assembled, you can refrigerate them for a day or two before baking, or even freeze them unbaked for longer storage. To freeze, simply arrange the unbaked empanadas on a parchment paper-lined tray and freeze until solid. Once frozen, transfer them to an airtight container or freezer bag. When you’re ready to bake, there’s no need to thaw; just add a few extra minutes to the baking time and brush with egg wash as usual. This makes them an unparalleled solution for nutritious, ready-to-go lunches and snacks throughout the school week.

Serving these beef and potato empanadas is a delight on its own, but they also pair wonderfully with dipping sauces. A classic salsa adds a zesty kick, while a rich marinara sauce can bring a comforting, Italian-inspired twist. You could even explore options like a creamy avocado dip, a spicy chimichurri, or a simple sour cream for added flavor. These versatile pastries are not just for lunchboxes; they make fantastic appetizers for gatherings, easy weeknight dinners, or satisfying after-school snacks.

Embrace the return to school with confidence, knowing you have a delicious, kid-approved lunch solution ready to go. These Beef and Potato Empanadas are more than just a meal; they’re a thoughtful, flavorful way to nourish your children and make school days a little brighter.

Ingredients

Scale

  • 1 tablespoon grape seed oil
  • 12 ounces Sprouts Old Tyme Butcher Shop 100% grass-fed beef stew meat, chopped into ½-inch pieces
  • 1/3 cup yellow onion, finely chopped
  • 1 teaspoon garlic, minced
  • ½ cup white potato, finely diced
  • ½ cup Sprouts brand frozen peas
  • 1/3 cup Sprouts brand diced tomatoes, well-drained
  • 1/8 teaspoon black pepper
  • ½ teaspoon salt, divided
  • 3 cups all-purpose flour
  • 1/8 teaspoon Sprouts Brand baking powder
  • 6 ounces unsalted butter, at room temperature
  • 2 large eggs, divided (one for dough, one for egg wash)
  • 1/3 cup water, at room temperature
  • Salsa or marinara sauce for dipping (optional)

Instructions

  1. Heat the grape seed oil over medium heat in a large sauté pan. Add the chopped beef, onion, and minced garlic. Cook for approximately 10-12 minutes, stirring occasionally, until the beef is browned and the onion is softened.
  2. Stir in the diced potatoes, frozen peas, and drained diced tomatoes. Cover the pan and continue to cook until the potatoes are tender, which should take about 8-10 minutes. Season the mixture with ¼ teaspoon of salt and the black pepper. Stir well and cook for an additional 2 minutes. Remove from heat and set aside to cool completely.
  3. While the filling cools, preheat your oven to 400°F (200°C).
  4. In a stand mixer fitted with a paddle attachment, combine the all-purpose flour, remaining ¼ teaspoon of salt, and Sprouts Brand baking powder. Add the room temperature unsalted butter and one egg. Gradually pour in the room temperature water, mixing until a soft and malleable dough forms. Remove the dough from the mixing bowl and form it into a smooth ball.
  5. Divide the dough in half. On a lightly floured surface, flatten each half with a rolling pin to create two large, even discs, about 1/8 inch thick.
  6. Using a 4-inch round cookie cutter or the rim of a small bowl, cut out individual dough discs from each large disc. Re-roll any dough scraps as needed to maximize the number of empanadas.
  7. In a small bowl, lightly beat the remaining egg to create an egg wash.
  8. Spoon about 1 ½ tablespoons of the cooled meat and potato mixture into the center of each 4-inch dough disc. Lightly brush the edges of each dough disc with the beaten egg wash. Fold the dough over to create a half-moon shape, enclosing the filling. Press the edges together firmly and then use the tines of a fork to crimp and seal the edges, creating a decorative pattern. Place the assembled empanadas on a large baking tray lined with parchment paper.
  9. Once all empanadas are assembled and placed on the prepared tray, prick the top of each empanada 2-3 times with a fork. This allows steam to escape during baking. Brush the tops of all empanadas generously with the remaining beaten egg wash for a beautiful golden finish.
  10. Bake for 20-25 minutes, or until the empanadas are golden brown and cooked through.
  11. Serve these delicious empanadas warm or at room temperature with your favorite salsa or marinara sauce for dipping, if desired. Enjoy!
