- 2 teaspoons balsamic vinegar
- 2 tablespoons fresh basil leaves, torn
- 4 (4-ounce each) salmon fillets, skin on or off
- Salt and freshly ground black pepper, to taste
- Fresh salad greens, for serving (optional)
Instructions
- Prepare the Plantains: Place the peeled and chopped plantains in a large pot and cover with cold water. Bring to a boil over high heat, then reduce heat to medium-low and simmer for 25-30 minutes, or until the plantains are very tender and easily pierced with a fork. Drain the plantains, reserving about 1/2 cup of the cooking water. Set the cooked plantains aside.
