Ingredients

  • 3 cups bread flour
  • 1/3 cup sugar
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoon salt
  • 2 (1/4 ounce) packets instant yeast
  • 1 tablespoon lemon zest
  • 2 eggs
  • 1 1/4 cup milk, room temperature
  • 1/4 cup butter, melted and cooled
  • 1 cup raisins

Topping:

  • 1/4 cup bread flour
  • 6 tablespoons water
  • 3 tablespoons honey, warmed

Instructions

  1. Combine flour, sugar, cloves, nutmeg, allspice, cinnamon, salt, yeast, and lemon zest in a large bowl of a stand mixer.
  2. Add eggs to milk and beat until mixed well. Add the milk/egg mixture and melted butter to the flour bowl. Using the stand mixer’s hook attachment, mix until the dough is sticky; about 2 minutes, scraping flour from the sides of the bowl into the dough as needed. Cover the bowl with plastic wrap and let rest in a warm area of your kitchen for 30 minutes.
  3. Add raisins to the dough and mix again with the stand mixer’s hook attachment until evenly distributed. Cover the bowl with plastic wrap and let rest in a warm area of your kitchen for 1 hour or until the dough doubles in size.
  4. Line a large baking sheet with parchment paper. Divide the dough into 12 equal balls (each about 100 grams). Arrange them on the baking sheet about 1/2-inch apart. Cover loosely with plastic wrap and let rest for another 45 minutes or until the buns have doubled in size.
  5. Preheat oven to 375° F (190°C).
  6. In a small bowl, mix together the 1/4 cup bread flour and 6 tablespoons water to make a smooth paste for the crosses. Transfer the paste to a piping bag or a plastic bag with a small tip cut off one corner. Carefully pipe a cross on top of each bun.
  7. Bake for 20-25 minutes, or until the buns are golden brown and sound hollow when tapped on the bottom.
  8. Once removed from the oven, immediately brush the warm buns with the warmed honey to give them a beautiful shine and a touch of extra sweetness. Let cool on a wire rack before enjoying.

  • For a decorative alternative, frosting or a simple white icing can also be used to create the crosses after the buns have cooled.
