The Undeniable Allure of Hummus: More Than Just a Dip
My family and I share an unwavering love for Sabra Hummus. It’s a pantry essential that transcends the traditional role of a mere dip. We find ourselves incorporating it into just about anything, transforming everyday meals and snacks into delightful experiences. And once in a while, it even becomes the star of an “unofficial meal”—a perfect, satisfying solution when you need a break from extensive kitchen work, offering a great snack without a shred of guilt. This is the beauty of hummus: its rich, creamy texture and versatile flavor profile make it an ideal foundation for countless culinary creations.
Beyond the classic pairing with crisp tortilla chips, crunchy carrot sticks, or as a savory spread on warm pita bread, I’m always on the lookout for innovative ways to elevate hummus into a truly memorable snack or even a full-fledged meal. Whether you’re planning a casual night in with loved ones or hosting a fancy get-together, these loaded red potatoes fit seamlessly into any scenario. They are bursting with flavor, incredibly easy to whip up in mere minutes, and absolutely perfect for those impromptu entertaining moments when you want to impress without the stress.
Sabra Hummus: A Foundation of Flavor and Wellness
Sabra Hummus stands out for its commitment to quality ingredients and vibrant flavors. Made from chickpeas, tahini, olive oil, and a hint of garlic and lemon, hummus is a powerhouse of nutrition. It’s naturally gluten-free, a good source of plant-based protein, and rich in dietary fiber, contributing to a feeling of fullness and promoting digestive health. These qualities make it an excellent choice for health-conscious individuals and families seeking delicious alternatives that don’t compromise on well-being. Sabra’s wide variety of flavors, from classic to roasted red pepper and garlic, ensures there’s a perfect hummus for every palate and every dish.
Hummus Loaded Red Potatoes: A Recipe for Joy
This particular rendition of loaded potatoes truly celebrates the heartiness of red potatoes combined with the creamy goodness of hummus. For this version, I intentionally kept it vegetarian-style, showcasing how incredibly satisfying and flavorful a plant-based option can be. The earthiness of the roasted potatoes, combined with the smooth, tangy notes of hummus, creates a harmonious blend that is surprisingly robust.
However, the beauty of this recipe lies in its adaptability. Don’t hesitate to customize it to your heart’s content! For those who prefer a heartier, more protein-rich meal, feel free to incorporate savory additions like crumbled pork chorizo, tender fajita steak, or shredded chicken. These elements add another layer of flavor and texture, transforming the dish into an even more substantial offering. The dollop of creamy Greek yogurt is another fantastic innovation, serving as an excellent substitute for traditional sour cream. It provides a similar tangy richness but with added protein and fewer calories, ensuring that this meal remains completely guilt-free without compromising on taste or satisfaction.
Unleashing Creativity: Customization and Serving Suggestions
These Hummus Loaded Red Potatoes are not just a recipe; they are a canvas for your culinary imagination. The small, bite-sized red potatoes offer the perfect individual serving, making them ideal appetizers or components of a larger tapas-style spread. Imagine a platter of these colorful, flavorful bites circulating at your next gathering – they’re guaranteed to be a hit!
For additional flavor boosts, consider sprinkling fresh herbs like finely chopped cilantro, parsley, or dill before serving. A dash of smoked paprika or a drizzle of your favorite hot sauce can add an exciting kick. If you’re experimenting with different Sabra Hummus flavors, a spicy hummus would perfectly complement the mild potato base, or a roasted garlic hummus could deepen the overall savory profile. The possibilities are truly endless, allowing you to tailor this dish to suit any preference or occasion.

Hummus Loaded Red Potatoes

Ingredients
Scale
- 10 (2-inch) red potatoes, scrubbed, rinsed and pat dried
- 1 tablespoon grape seed oil
- 1 tablespoon sea salt
- 10 tablespoons Sabra Hummus (your favorite variety)
- 10 teaspoons plain Greek yogurt
- 5 teaspoons cooked soy chorizo
- 10 teaspoons Mexican blend cheese, shredded
- 5 chives, finely chopped
Instructions
- Preheat your oven to 375° F (approximately 190° C).
- Carefully slice off a small, thin piece from one side of each red potato. This creates a stable, flat base, ensuring the potatoes sit upright on the baking sheet without rolling.
- In a large mixing bowl, combine the grape seed oil and sea salt. Add the prepared red potatoes and toss thoroughly until each potato is evenly coated with the oil and salt mixture. This ensures a beautifully seasoned and crispy skin.
- Arrange the seasoned potatoes on a baking sheet, cut side down, allowing for ample space between each one for even cooking. Bake for 25 minutes, or until the potatoes are perfectly soft and tender when pierced with a fork. Once baked, remove from the oven and let them cool for 5-10 minutes – they will be quite hot!
- Once cooled enough to handle, carefully slice the very top off each potato. Using a melon baller or a small spoon, gently scoop out approximately 1 tablespoon of the soft potato flesh from the center, creating a small hollow for the filling.
- Now for the delicious assembly! Fill each hollowed potato with 1 tablespoon of your favorite Sabra Hummus. Generously top each hummus-filled potato with 1 teaspoon of plain Greek yogurt, 1/2 teaspoon of cooked soy chorizo (or your preferred protein), 1 teaspoon of shredded Mexican blend cheese, and a delightful sprinkle of fresh, finely chopped chives for a burst of color and flavor. Serve immediately and enjoy!
