Ingredients

Gather these high-quality ingredients to create a truly irresistible Pumpkin Corn Cake:

2 ½ cups all-purpose flour

¼ teaspoon salt

2 tablespoons corn starch

2 tablespoons baking powder

2 tablespoons granulated sugar

1 cup sweetened condensed milk

3 cups white corn kernels (fresh or frozen, thawed)

½ cup pure pumpkin puree (not pumpkin pie filling)

1 cup Land O Lakes® Pumpkin Pie Spice Butter Spread, softened

5 large eggs

Confectioner’s sugar for dusting


Instructions

1. Begin by preheating your oven to 350° F (175° C). Prepare a 10-inch springform pan by lightly spraying it with a non-stick cooking spray. This will ensure your cake releases beautifully. Set the prepared pan aside.

2. In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, salt, corn starch, baking powder, and granulated sugar. Ensure they are well combined to prevent any lumps in your final batter. Set this dry mixture aside.

3. In a blender, combine the sweetened condensed milk and half of the white corn kernels. Blend until the mixture is smooth and creamy. Next, add the remaining corn kernels and the pure pumpkin puree. Blend for an additional 10 seconds to incorporate them without over-processing. Add the softened Land O Lakes® Pumpkin Pie Spice Butter Spread and blend for another 10 seconds until fully integrated. Finally, crack in the eggs and blend for a fourth time, for just 10 seconds, ensuring everything is well combined without developing too much gluten.

4. Carefully transfer the blended wet mixture into the large mixing bowl containing your dry ingredients. Using a fine mesh strainer, gradually sift the dry mixture over the wet mixture. This step helps to aerate the flour and prevent lumps, resulting in a lighter cake. Using a whisk, gently stir the wet and dry ingredients together until they are just combined and no streaks of flour remain. Be careful not to overmix, as this can lead to a tough cake.

5. Pour the prepared batter evenly into your greased 10-inch springform pan. Place it in the preheated oven and bake for approximately 55 minutes, or until a toothpick inserted into the center of the cake comes out clean. This indicates that the cake is fully cooked through. Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. This allows the cake to set before you release the springform pan. After 10 minutes, carefully unlatch and remove the sides of the pan, then let the cake cool completely on a wire rack.
