Description

This incredibly flavorful and versatile veggie frittata, enhanced with the vibrant tastes of a la Mexicana style vegetables and hearty potatoes, is perfect for any meal. 1 large Roma tomato, divided

1 small jalapeño, divided

1 tablespoon canola oil

½ cup white onion, finely chopped

1 garlic clove, finely chopped

1 cup cooked potatoes, diced

9 large eggs

1/3 cup table cream

½ cup 2% low-fat milk

1 ¼ cups Monterey Jack Cheese, shredded

½ teaspoon salt

¼ teaspoon black pepper

8 thin slices red onion, for garnish

2 tablespoons fresh cilantro, chopped, for garnish

Instructions

1. Carefully cut half of the Roma tomato into small, uniform dice. Slice the remaining half into thin rounds for garnish.

2. Finely chop half of the small jalapeño. Slice the other half into thin rings, also for garnish.

3. Heat the canola oil in a large, oven-safe cast iron skillet over medium heat. Add the finely chopped white onion and sauté for approximately 2 minutes until softened. Stir in the finely chopped garlic and cook for an additional minute, stirring constantly to prevent burning. Incorporate the diced tomato and chopped jalapeño into the skillet. Reduce the heat to medium-low and cook for about 20 minutes, stirring frequently, until the vegetables are tender and fragrant. Gently stir in the cooked diced potatoes. Remove the skillet from the heat.

4. While the vegetable mixture is cooling slightly, preheat your oven to 375°F (190°C).

5. In a large mixing bowl, thoroughly whisk together the eggs, table cream, milk, shredded Monterey Jack cheese, salt, and black pepper until well combined and slightly frothy. Pour this egg mixture evenly over the vegetable and potato mixture in the cast iron skillet. Stir gently to ensure all ingredients are distributed. Artistically arrange the thin tomato slices, jalapeño slices, and red onion slices on top of the frittata mixture. Transfer the skillet to the preheated oven and bake for 20-22 minutes, or until the edges are set and golden, but the center still has a slight wobble. Remove the frittata from the oven and let it rest for 5 minutes to fully set. Before serving, sprinkle generously with fresh chopped cilantro.
