Effortless Prickly Pear Jam: A 30-Minute Delight with the Ball FreshTECH Maker
Prickly pears, also known as tuna fruit, offer a uniquely sweet and subtly earthy flavor profile, making them an exceptional choice for homemade jam. Their vibrant color and distinct taste create a truly gourmet experience. With the Ball FreshTECH Automatic Jam & Jelly Maker, transforming these fascinating fruits into a spreadable delight is incredibly straightforward.
Yields 2 Pints
Ingredients:
- 20 peeled prickly pears (tunas)
- 6 tablespoons Ball® RealFruit® Classic Pectin
- 1 teaspoon butter or margarine (helps reduce foaming)
- 1 cup granulated sugar
Equipment:
- Ball FreshTECH Automatic Jam & Jelly Maker
- Potato masher
- Clean Ball canning jars (pint size recommended)
- Ladle
- Canning funnel (optional, but recommended for clean filling)
- Heat-resistant gloves (for handling prickly pears safely)
Instructions:
- Prepare the Prickly Pears: Carefully peel the prickly pears. It’s advisable to wear gloves to avoid their tiny, irritating spines. Mash the peeled prickly pears, one layer at a time, using a potato masher until a smooth pulp is achieved. Set aside.
- Add Pectin and Fruit to Maker: Sprinkle the Ball® RealFruit® Classic Pectin evenly over the bottom of the Ball FreshTECH Jam & Jelly Maker pot. Ensure the mixing paddle is correctly installed. Evenly add the mashed prickly pears over the pectin. Incorporate the butter or margarine at this stage; this ingredient helps significantly in reducing foam during the cooking process.
- Start the Jam Maker: Using your Ball FreshTECH Automatic Jam & Jelly Maker, press the “Jam” button. The appliance will automatically program the default cooking time to 21 minutes. Press “Enter” to begin the cooking cycle.
- Add Sugar: After approximately 4 minutes, the appliance will emit four short beeps. This sound indicates that it is time to add the sugar. Slowly and gradually add the granulated sugar into the pot while the mixing paddle continues to operate. Once all the sugar is added, place the glass lid securely onto the pot.
- Complete Cooking Cycle: The Ball FreshTECH Jam & Jelly Maker will continue to automatically stir and cook the ingredients until the process is complete. Stay within earshot of the appliance; it will emit a distinct sound at the end of the cooking cycle, signaling that your delicious jam is ready.
- Finish and Skim: Once the cycle finishes, press “Cancel” and immediately unplug the appliance. Carefully remove the glass lid, using oven mitts if necessary, as steam will be hot. Using a heat-resistant utensil, carefully remove the mixing paddle from the pot. If any foam has formed on the surface of the jam, gently skim it off with a spoon.
- Prepare Jars (Optional for longer shelf life): For immediate refrigeration and consumption within 3 weeks, simply ensure your jars are clean. If you wish to process the jam for shelf-stable storage (following standard water bath canning guidelines), sterilize your Ball jars by placing them in a large pot filled with water. Bring the water to a boil, then reduce heat and keep the jars hot until ready to fill.
- Fill Jars: Ladle the hot jam into your clean, hot jars, leaving approximately 1/4 inch of headspace from the rim. Wipe the jar rims clean to ensure a good seal. Place new lids and bands on the jars, tightening finger-tight.
- Cool and Store: Allow the filled jars to cool at room temperature for about 30 minutes. Once cooled, label your jars. For this recipe, the jam should be refrigerated and consumed within 3 weeks. If you followed standard water bath canning procedures (not detailed in this specific Ball FreshTECH recipe but essential for shelf-stable goods), the jam would be shelf-stable.
