Ingredients for Pupusas & Curtido

  • 1/3 cup Hellmann’s® or Best Foods® Real Mayonnaise
  • 1/3 cup PLUS 1 teaspoon cider vinegar, divided
  • 1/4 teaspoon salt
  • 1 teaspoon light brown sugar
  • 1/4 teaspoon red pepper flakes
  • 1/2 small head purple cabbage, finely shredded
  • 2 large carrots, peeled and grated
  • 1 small white onion, divided
  • 4 plum tomatoes (about 12 oz.)
  • 1 small clove garlic, peeled
  • 4 finely chopped serrano chiles, stemmed, seeded if desired
  • 1/3 cup fresh cilantro, chopped
  • 1 1/2 teaspoon. Knorr® Chicken flavor Bouillon, divided
  • 5 teaspoons vegetable oil, divided
  • 1 1/2 cups cooked no salt added pinto beans, thoroughly mashed
  • 1 1/2 cups part-skim mozzarella cheese, shredded
  • 4 cups masa harina (corn flour for tortillas)


Instructions for Preparation

  1. For the Curtido: In a large mixing bowl, combine Hellmann’s® or Best Foods® Real Mayonnaise, 1/3 cup of the cider vinegar, salt, light brown sugar, and red pepper flakes. Whisk until well combined. Add the finely shredded purple cabbage and grated carrots to the bowl. Finely slice 1/2 of the white onion and stir it into the cabbage and carrot mixture. Toss gently to ensure all ingredients are evenly coated. Cover the bowl and refrigerate until ready to serve, allowing the flavors to meld and the cabbage to pickle slightly.
  2. For the Salsa: Roughly chop the remaining 1/2 of the white onion. In a blender, combine the chopped onion, plum tomatoes, garlic clove, stemmed and seeded (if desired) serrano chiles, fresh cilantro, 1/2 cup of water, 1/2 teaspoon of Knorr® Chicken flavor Bouillon, and the remaining 1 teaspoon of cider vinegar. Pulse until the mixture is smooth and consistent.
  3. Heat 1 tablespoon of oil in a medium skillet over medium-high heat. Carefully pour the contents from the blender into the heated skillet and bring to a boil. Reduce the heat to a simmer and cook, stirring occasionally, until the salsa has reduced by half and thickened slightly, which should take approximately 10 minutes. Remove from heat and allow to cool to room temperature before serving alongside the pupusas.
  4. For the Refried Beans: Heat 1 teaspoon of oil in a medium skillet over medium heat. Add the yellow onion (if using, otherwise skip this step). Cook, stirring occasionally, until the onion turns golden and softens, about 5 minutes. Transfer the cooked onion to a blender or food processor (if not already mashed), reserving the skillet for later use.
  5. Add the cooked, mashed pinto beans to the blender with the onion (if used) and blend until smooth. Return the mashed beans to the reserved skillet, season with 1/2 teaspoon of Knorr® Chicken flavor Bouillon, and keep warm over low heat until ready to use for filling the pupusas.
  6. For the Pupusas (Masa Dough): In a large mixing bowl, combine the masa harina, the remaining 1/2 teaspoon of Knorr® Chicken flavor Bouillon, and 3-1/2 cups of water. Mix thoroughly with your hands to form a slightly sticky, pliable dough. If the dough feels too dry, add a little more water, one tablespoon at a time, until the desired consistency is reached (it should be soft but not overly sticky). Cover the dough with a damp kitchen towel and let it rest for 10 minutes before forming the pupusas.
  7. Divide the rested dough into 20 equal egg-sized balls. Keep the dough balls covered with a damp towel to prevent them from drying out. Take one dough ball and, using your thumbs, gently press into the center to form a deep bowl shape. Fill the cavity with 1 to 2 tablespoons of shredded part-skim mozzarella cheese, pressing it into the sides of the dough. Then, top the cheese with about 1/2 tablespoon of the warm bean mixture. Carefully bring the edges of the dough together over the filling to completely seal it. Gently pat and squeeze the filled ball to form a flat disk, approximately 4 inches in diameter. Repeat this process with the remaining dough and fillings.
  8. Heat a large skillet or comal over medium-high heat. Lightly brush the surface of the skillet with 1 to 2 teaspoons of oil. Cook the pupusas in batches, ensuring not to overcrowd the skillet. Cook each pupusa until it turns golden brown with slightly darker, toasted spots on both sides, which typically takes about 6 minutes, flipping once halfway through cooking. Serve the freshly cooked pupusas immediately with the prepared Curtido, the flavorful Salsa, and a sprinkle of fresh cilantro for garnish. Enjoy this taste of Central American tradition!
