- 2 cups baby bella mushrooms, sliced
- 1 large yellow onion, thinly sliced
- 2 cups ripe tomatoes, chopped
- 1 pint fresh strawberries
- 1 cup fresh blueberries
- 3 ounces smoked salmon
- 1 large avocado, sliced
- Apricot jam or preserves
- 2 crisp apples, thinly sliced
- 1 cup mixture of green and Kalamata olives
- Gourmet dark chocolate (ALDI’s Moser Roth is highly recommended!)
- 1 (8-ounce) package cream cheese, softened
- 1 cup aged cheddar, sliced or shredded
- 1 1/2 cups trail mix (with nuts and dried fruits)
- Light citrus beer (optional, for serving)
- Salt and black pepper to taste
Instructions
- Preheat your oven to 350° F (175° C).
- Line two large baking sheets with aluminum foil for easy cleanup. Arrange the sliced baguette pieces on the baking sheets in a single layer. Lightly brush both sides of each baguette slice with olive oil. Bake for approximately 30 minutes, flipping the bread slices halfway through to ensure even toasting and crispness. Set aside to cool.
- In a large skillet, heat 2 teaspoons of olive oil over medium heat. Add the beaten eggs and stir continuously with a rubber spatula until the eggs are fully set and fluffy. Transfer the scrambled eggs to a serving bowl and keep warm until ready to assemble.
- Using a small skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced baby bella mushrooms, season with salt and pepper to taste, and cook until the mushrooms are tender and lightly browned. Remove from heat and set aside to cool.
- In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the thinly sliced yellow onion and, if desired, a few sliced jalapeños for a touch of heat. Season with salt and pepper and cook until the onion is tender and translucent, and the jalapeños are slightly roasted.
- Assemble your crostini bar! Arrange the prepared crostini slices on a large serving board or platter. Place the scrambled eggs and roasted mushrooms in separate serving trays or bowls. Arrange the cooked onions and jalapeños on a narrow tray, alongside the sliced avocado and chopped tomatoes (arranged to mimic the Mexican flag for a festive touch!). Finally, artfully place the remaining items – smoked salmon, fresh fruits, olives, dark chocolate, apricot jam, cream cheese, aged cheddar, and trail mix – around the crostini. Serve with a refreshing light citrus beer or your preferred beverage.
