Instructions

  1. Spread out half of the warmed rice pilaf on a piece of plastic wrap. Top the rice with half of the seasoned tuna. Using the plastic wrap, carefully gather the edges to stuff the tuna into the middle of the rice, forming a compact ball. Twist the ends of the plastic wrap to seal the rice ball securely. Place the wrapped rice ball in the refrigerator for 15 minutes to firm up.
  2. While the rice ball chills, prepare your bento box or lunch container. Arrange a bed of fresh lettuce leaves at the bottom of the container. In one section, artfully arrange the cherry tomatoes, carrot shreds and slices, fish-shaped crackers, pretzels, and the string cheese pieces (which can be cut into fun shapes like hearts using small molds). In another section, place the apple slices, fresh blueberries, chocolate-dipped mushroom cookies, and granola bites.
