- 2 tablespoons butter, divided
- 1/2 cup mushrooms, sliced
- 2 cups yellow onion, roughly chopped
- 3 garlic cloves, chopped
- 1 1/2 teaspoons salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ground ginger
- 2 (15 ounce) cans pumpkin puree
- 3 cups vegetable (or chicken) broth
- 1 cup water
- 1/2 cup heavy cream
- Roasted pepitas for garnish
- Thyme sprigs for garnish
- Chile powder for garnish
Instructions
- Melt 1 tablespoon butter in a large saucepan over medium heat. Add mushrooms and cook for 5 minutes until tender. Remove the mushrooms from the saucepan and set aside to use as a flavorful garnish.
- Melt the remaining tablespoon of butter in the same saucepan. Add the chopped onion and cook for 15 minutes, stirring frequently, until the onion turns golden brown and becomes wonderfully tender. Be careful not to burn it.
- Stir in the minced garlic, salt, cinnamon, nutmeg, and ground ginger. Cook for an additional minute, allowing the spices to become fragrant and their aromas to deepen.
- Pour in the vegetable (or chicken) broth, water, and pumpkin puree. Stir thoroughly after each addition to ensure all ingredients are completely combined and smooth. Reduce the heat to low and let the soup simmer gently for 20 minutes, allowing the flavors to meld beautifully.
- Carefully transfer the hot soup to a blender and blend in batches until it achieves a perfectly smooth and creamy consistency. (Alternatively, for convenience, an immersion blender can be used directly in the saucepan.) Once blended, return the soup to the saucepan and stir in the heavy cream until fully incorporated and heated through.
- Serve this delicious pumpkin soup in individual bowls or, for a festive presentation, in small hollowed-out pie pumpkins. Garnish generously with the reserved sautéed mushrooms, a sprinkle of crunchy roasted pepitas, fresh thyme sprigs, and a dusting of chile powder for an extra touch of warmth and spice.
