Ingredients

1/4 cup brown sugar

1/8 teaspoon (pinch) salt

1/4 teaspoon ground cinnamon

1 tablespoon water

1/4 cup pecan halves

Ingredients for Baked Oatmeal

non-stick olive oil cooking spray

3 cups old fashioned rolled oats

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

2 cups oat milk (or any milk of your preference)

1/2 cup maple syrup

2 eggs, beaten

3 large yellow peaches, chopped; save a few slices for garnish

1/3 cup pecans, chopped

whipped cream (for serving)

mint leaves (for garnish)


Instructions

For Glazed Pecans

1. Line a small tray with parchment paper. Set aside.

2. Combine brown sugar, salt, cinnamon, and water in a small pan. Heat over medium heat until the sugar dissolves and the mixture begins to bubble. Stir in the pecan halves, ensuring they are evenly coated, and cook for 3 minutes.
