  1. Begin by soaking the guajillo chilies in enough hot water to completely cover them. Let them soften for at least 30 minutes. Once pliable, drain the chilies, reserving about ½ cup of the soaking liquid. Transfer the drained chilies to a blender container. Add the garlic cloves, the reserved ½ cup of chili soaking water, dried oregano, white vinegar, and 1 teaspoon of salt. Blend the mixture until it is perfectly smooth. For a silky broth, pass the blended mixture through a fine sieve or colander to remove any remaining skins or seeds.
  2. Next, combine the chopped chayote, green beans, peas, potatoes, carrots, and 6 cups of fresh water in your Farberware Caldero. Cover the pot and bring the mixture to a boil over medium heat.
