Yield:
Serves 6
Ingredients
- 2 teaspoons garlic salt
- 1 teaspoon ground cumin
- 2 teaspoons dried oregano
- 2 teaspoons brown sugar
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1.5 pounds boneless pork loin, cut in 2-inch pieces
- 2 oranges, halved
- 1 lime, halved
- 1 cup water
- 6 baked tostadas
- 1 ½ cups mashed avocado
- 2 Roma tomatoes, chopped
- 3 radishes, sliced
- ½ cup red onion slices
- Cilantro for garnish
- Salt and pepper to taste
- Pickled jalapeño and carrots for serving
Instructions
- Prepare the Spice Blend: In a small bowl, thoroughly combine the garlic salt, ground cumin, dried oregano, brown sugar, paprika, and chili powder. Mix until all spices are evenly distributed. This aromatic blend is key to developing the signature carnitas flavor.
- Season the Pork Loin: Place the 2-inch pieces of boneless pork loin on a clean working surface or cutting board. Sprinkle approximately half of the prepared seasoning mixture evenly over all sides of the pork pieces, ensuring each piece is well coated.
- Set Up the Pressure Cooker: Carefully transfer the seasoned pork loin pieces into your pressure cooker or Instant Pot. Squeeze the fresh juice from the lime and both oranges directly over the pork. Add the squeezed lime half and the two squeezed orange halves to the pot as well; these citrus elements will contribute depth and tenderize the meat. Pour in 1 cup of water and then sprinkle the remaining half of the seasoning mix over everything.
- Pressure Cook to Perfection: Secure the lid on your pressure cooker. Select the “Pressure Cook” (or “Manual”) setting and set the cooking time for 40 minutes on high pressure. Allow the cooker to come to pressure naturally. The high-pressure environment will tenderize the pork rapidly, infusing it with all the wonderful flavors.
- Natural Pressure Release: Once the 40-minute cooking cycle is complete, do not immediately release the pressure. Instead, allow for a natural pressure release for 30 minutes. This crucial step helps keep the pork incredibly moist and tender. After 30 minutes, if any pressure remains, carefully set the knob to the “Venting” position to release the rest. Once the float valve drops, safely open the Instant Pot. Using tongs, carefully remove the cooked pork loin pieces and place them on a large plate or shallow dish to cool slightly.
- Shred the Carnitas: Once the pork has cooled enough to handle, use two forks to shred the tender pork loin pieces. The meat should be so tender that it pulls apart with very little effort. This shredded texture is perfect for tostadas, allowing it to soak up all the delicious juices.
To Serve Your Delicious Carnitas Tostadas:
- Assemble and Enjoy: Begin by spreading about ¼ cup of mashed avocado evenly onto each baked tostada shell. This adds a creamy, rich layer. Next, generously pile the shredded carnitas on top of the avocado. Arrange chopped Roma tomatoes, thinly sliced red onion, and crisp radish slices over the carnitas. Garnish with fresh cilantro for a burst of color and herbaceous flavor. Season with salt and freshly ground black pepper to taste. Serve immediately, with a side of tangy pickled jalapeños and carrots for an added kick and satisfying crunch. For an extra layer of flavor and texture, consider adding a sprinkle of crumbled cotija cheese or a drizzle of Mexican crema. These Carnitas Tostadas offer a harmonious blend of textures and vibrant flavors, making every bite a delight.
