Ingredients

  • 2 cups extra virgin olive oil (or enough to generously cover vegetables)
  • 2 cups white or gold potatoes, peeled and cut into 1 1/2-inch thick slices
  • 1 cup yellow onion, thinly sliced
  • 8 large eggs
  • 2 teaspoons salt, or to taste
  • 1/2 teaspoon ground black pepper, or to taste

  • Sour cream
  • Fresh thyme, chopped
  • Fresh parsley, chopped
  • Tomatoes, chopped

Instructions

  1. In a 10-inch non-stick skillet, combine the olive oil, thinly sliced onion, and potato pieces. Ensure the oil generously covers the vegetables. Heat the skillet over medium-low heat.
