Ingredients
For the Homemade Ginger Syrup:
2/3 cup freshly peeled ginger, finely chopped or grated (about 4-5 inches of ginger root)
¼ cup granulated sugar
¼ cup water
For the Papaya Agua Fresca:
3 cups ripe papaya, peeled, deseeded, and chopped into chunks
4 cups cold water, divided (2 cups for blending, 2 cups for diluting)
2 tablespoons freshly squeezed lime juice (from about 1-2 limes), or more to taste
Optional: Ice cubes, extra lime slices, or mint sprigs for garnish
Instructions
1. Prepare the Ginger Syrup: In a small saucepan, combine the chopped ginger, sugar, and ¼ cup of water. Place over medium heat and bring the mixture to a gentle simmer, stirring occasionally until the sugar has completely dissolved. Once simmering, reduce the heat to low and continue to cook for approximately 25 minutes, allowing the flavors to meld and the syrup to thicken slightly. Remove the saucepan from the heat and let the syrup cool completely to room temperature. Once cooled, strain the syrup through a fine-mesh sieve into a clean jar or container, discarding the solids (ginger pieces). This concentrated ginger syrup will provide a delightful warmth and spice to your agua fresca.
2. Blend the Papaya Mixture: Into a high-speed blender, add the chopped papaya, 2 cups of cold water, and the freshly squeezed lime juice. Blend on high until the mixture is completely smooth and free of any lumps. For an extra silky texture, you can optionally strain this papaya puree through a fine-mesh sieve, though it’s often not necessary with a good blender.
3. Combine and Serve: Pour the remaining 2 cups of cold water into a large serving pitcher. Stir in the cooled ginger syrup and the blended papaya mixture. Taste and adjust sweetness or lime juice as desired. You might want to add a little more sugar if you prefer a sweeter drink, or more lime for extra tang.
